When did marco sell his soul to knorr? I worked in hotel kitchens and am qualified if I had ever used a stock pot I would have being in so much trouble my life would have been terrifying and my job would have probably ended.

This is delicious, but it is NOT spaghetti carbonara. Bacon adds a smokey flavor. You are supposed to use guanchalay or pantchetta. You want to use a cured, fatty cut of pork for true carbonara flavor. And while he did address the cream, you are not supposed to use cream. The egg and pasta water, with the cheese are supposed to make the sauce. As I said, I did try making this and it is absolutely delicious and I would highly, HIGHLY, recommend you try it. It is a simple, delicious, satisfying pasta dish, but to call it carbonara is NOT accurate.

Actually my fav. Chef was Gordon. But as I heard about Marco, I thought...."Is it still the right time to change my mind?" Because he's so fluent and calm, but also elegant. How he cooks and how he speaks. They're all elegant. Even in Hell's kitchen, Marco still looks intimidating and fierce without his voice being raised. And when he taught, he looks like Bob ross. Calm, but filled with passion. I understand now why he made Gordon cry once. But still I love Gordon. I love both him and Marco.

Marco, I am just a retired old guy now but, I am fascinated with cooking really delicious food. I have learned so much from you, and one of the greatest teaches is that I look for the blood to just begin to pierce the top of the steak for medium rare medium. Compound butters are a tremendous flavor enhancement to steak when in the mood for that little extra or when I have it on hand. I am cooking better and eating much better now than ever before because of the time you have taken to show people like me some of the simple basics to make food taste amazing. Thank You.
