I make anisetti biscotti with walnuts. The recipe I obtained is over 100 years old. It was my friends grandmothers recipe. Her recipe calls for anise seeds and anise oil and also 2 sticks butter. The olive oil you use sounds delicious. Can you taste the olive oil? Another great recipe to try. Thanks

However, like any sweetener, it should be enjoyed in moderation (hence I've only used a 1/4 cup). If you are to pick one, pure maple syrup is the natural choice over table sugar. It is lower on the glycemic index, meaning it doesn’t spike blood sugar as quickly. Though feel free to totally omit it, if you like. Have a great day!

This is a lovely straight-foreword recipe. I do wish you had broken a biscotti at the end so I could have seen what kind of texture these are intended to be. Are they the break your teeth kind of biscotti texture or the anise toast biscotti texture or something else?

Hi Sam, Thanks for your feedback. I'm aware that this isn't a traditional carbonara. Some carbonara recipes use garlic, this one uses onion. It also does not have black pepper (though next time I think I will add it). As I never grew up with it, this is what it looks like for us. I guess it's a carbonara inspired dish (bacon & eggs spaghetti), and it is quite delicious, I must say.😋 I think recipes can differ...just like tomato sauces for pasta, for example. Some add all sorts of herbs (parsley, basil, rosemary, oregano, sage), but we only use basil in ours. Or pasta e fagioli - there's lots of different ways to make it (using different beans, some even add minced meat), but in my video I share how I make it. Thank you for watching, I do appreciate it.

I think overall that looks pretty good, but here are a couple of critiques and changes that I have: Firstly, I would not add onion. It just doesn't belong in a carbonara. A carbonara is all about the smokey flavor from the guanciale (or in your case, turkey bacon) with the creaminess of the cheese and eggs. Onion dilutes that flavor and texture. Secondly, you're missing a very vital ingredient in your Carbonara: Black pepper. I would even go so far as to say that pepper is the main flavoring of a carbonara (The name carbonara comes from the black pepper) Thirdly, the little bits of yellow in your finalized pasta would lead me to believe that you either overcooked the carbonara (The eggs are coagulated/scrambled) or the parmesan didn't melt all the way through when you made the mixture. I would personally mix in some pasta water or bacon fat into the mix to help make the cheese softer. And lastly, when you finish the carbonara, the heat should either be on the lowest setting, or completely off, to prevent the eggs from scrambling/coagulating, and it shouldn't take more than 60 seconds. I would advise tossing the pasta, instead of mixing it with thongs, as it distributes the heat better. Hope it wasn't too big of a mouthful, and I hope it helps. Also I would love to try the pasta with turkey bacon instead, because it sounds quite yummy.

I got the recipe from a cookbook over 35 years ago when I first started cooking. The recipe also said that instead of Parmesan cheese, you can use pasteurized processed cheese (which I've never done). So it's not a traditional recipe...it had definitely been tweaked, but it looked easy to make and I had all the ingredients. My husband and I found it very tasty so we've been making it ever since. Over the years we made our own tweaks to it with the healthier pasta and bacon. Though I do look forward to following your suggestions in making a more traditional carbonara.👍
