I just love slow cooker (crockpot) recipes! Here's an easy chicken thighs recipe that is full of flavour and so easy to make. My family absolutely loves it! It is just as delicious (if not more) to have for leftovers! Below is the recipe...I hope you give it a try.
Ingredients:
1 - 2 tbsp. extra-virgin Olive Oil
6 - 9 bone-in-or boneless Chicken Thighs
Salt
Black Pepper
1/2 cup low-sodium Soy Sauce
1/2 cup Ketchup
1/4 cup Honey
3 cloves Garlic (minced)
2 teaspoons freshly minced Ginger
2 tablespoons Sriracha sauce
Juice of 1 Lime
Cooked rice, for serving.
Directions:
In a large skillet over medium-high heat, heat oil. Season chicken thighs with salt and pepper and sear until golden, 3 minutes per side. Transfer to slow-cooker.
In a small bowl, whish together soy sauce, ketchup, honey, garlic, ginger, Sriracha, and lime juice. Pour sauce over chicken until coated.
Cover and cook on low for 5 to 6 hours, or on high for 2 hours, until no longer pink. (I like to cook on high for 2 hours and then low for 1 to 2 more hours.)
Serve over rice.
