Classic Chocolate Crinkles | Deliciously Rich & Chocolatey!

These delicious chocolate crinkle cookies are a classic and very easy to make. They are wonderfully sweet and chocolatey...perfect for any occasion! You can substitute ingredients for healthier alternatives, and choose whether you wish to chill the dough or not before baking. You will have most (if not all) of the ingredients already on hand!
Ingredients:
1 cup All-purpose Flour or Whole Wheat Flour
1/2 cup unsweetened Cocoa Powder
1 teaspoon Baking Powder
1/4 teaspoon Salt
3/4 cup Granulated Sugar or Organic Cane Sugar
1/4 cup Vegetable, Canola, Sunflower or Extra Virgin Olive Oil
2 large Eggs
1 teaspoon pure Vanilla Extract
1 cup Semi-sweet Chocolate Chips (optional)
1 cup Powdered Sugar (for coating cookies)
Instructions:
- In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt until combined. Set aside.
- In a bowl of a stand mixer, add the oil and granulated sugar. Beat on medium-high speed for 2 minutes, or until light and fluffy. Add in the eggs one at a time, beating on medium-low speed until combined. Add in vanilla, beating on medium-low speed until combined. - -- Add in the chocolate chips (if using) and beat (or mix by hand) until combined.
- If chilling the dough, form it into a large ball and place in plastic wrap so that it is sealed tightly. Refrigerate for at least 1 or 2 hours (or up to 24 hours) until the dough is chilled completely through.
- When ready to bake, preheat oven to 350 degrees F. Line large cookie sheet (or sheets - depending on if you roll your cookies small like I do) with parchment paper. Scoop the powdered sugar into a small bowl. Then roll the dough into 1 inch balls (or the size you prefer), dip each ball in the powdered sugar until completely covered on all sides. Then place the dough balls around 2 inches apart on the prepared baking sheet.
- Bake for 9 or 10 minutes, then remove and let the cookies cool on baking sheet for 3 minutes. Transfer to wire rack and let them cool to room temperature.
- Serve immediately, or store in a sealed contained for up to 5 days. These cookies either in dough form or baked can also freeze well for up to 3 months in a sealed container.
