Tasty Low Carb Pancakes | No Sugar or Grains ~ Quick & Easy!

Very few ingredients are needed to make these delicious thick, fluffy pancakes. They are low carb and contain no sugar or grains, yet they are incredibly tasty! The batter is enough for 2 people, but you can double or triple it for more people...it's so easy! My husband who mainly tries to follow a Keto diet likes his plain and uses the no-sugar syrup. I like mine with blueberries and prefer the pure maple syrup. We both love this pancake recipe and not just for breakfast...it is very satisfying for lunch or dinner, too. I hope you give it a try!
Ingredients:
2 large eggs (room temperature)
1 teaspoon Coconut Oil (melted)
1/4 cup Milk of Choice (ie: Almond or Coconut ~ I used regular 2% milk)
1 cup Almond Flour
1/2 teaspoon Baking Powder
Blueberries or other fruit (optional)
Instructions:
In a bowl, whisk together eggs, coconut oil and milk until combined.
In a separate bowl, mix almond flour and baking powder. Gently fold the dry ingredients into the wet ingredients until combined.
Grease a large non-stick pan with butter (or coconut oil) and place over medium heat. Once hot pour 1/4 cup spoonfuls of the batter onto the pan and cover it. Cook 3-4 minutes, or until edges begin to bubble.
Remove lid and carefully flip pancakes, and cook another 1-2 minutes, covered. Repeat. Serve immediately. Enjoy!

    @@panama7223 I don't know the carb count. I've used almond flour which is a low glycemic index food with fewer sugars and carbs then wheat flour. These pancakes are very tasty.👌

    Why would you press down on the pancakes after flipping them? You've added leavening to make them rise, and you're pushing it down. Makes no sense.

    My husband prefers his pancakes a little thinner, hence why he presses them down. They still come out thick and fluffy enough. Though do what works best for you.😊
