    First, thanks for watching! It’s a fair question….I use it both ways. If I’m grilling skinless chicken or even skin on breasts, I’ll use it the way I did in the video because I don’t want quite as high heat. I should have never turned it the way I did in the video because it confused people. But you can definitely use it either way. I saw www.youtube.com/@CookingWithRy use it that way once and I liked it. I think it was him.     Open fire cooking is probably one of the most satisfying endeavors. I think a lot of people are genuinely scared of what is involved. The Weber kettle is probably one of the ways you can use this method most safely and compactly since the fire is contained in the bowl and you don’t increase the footprint of the original cooker. And it is portable! Thanks for demystifying this great cooking method using the Santa Maria. I am currently juggling a couple of ideas in terms of getting back into cooking with charcoal and wood after using a gas grill and a Weber Smokefire for a few years. Those are both great for convenience, but being a former owner and chef of a BBQ restaurant, I hanker for manual tools. I was considering a Weber Summit Kamado or plain old Kettle, open firepit. I think you have inspired me to go for a kettle and get a bunch of accessories with it, like this. Thank you very much!

    I agree, it is so enjoyable cooking over open fire! There are so many things you can do with the Santa Maria attachment I’m glad you are inspired to go back to a kettle.     Thanks for watching! Yes, depending on the weight. I’ve had 2 chickens that weighed 3.5lb each and it was no problem for the rotisserie. I feel certain it can handle 8lb easy.

    First, thanks for watching! Second, yes very comparable. It’s odd though, it feels like the smoke and sizzle can hold more charcoal. I don’t know that to be fact or anything. It just seems like it does.

    @@grumpysgreatoutdoors Since the charcoal compartment isn’t partially taken up by the water chamber like the SnS then it makes sense that the Smoke & Sizzle would hold more charcoal. I guess some people would say the placement of the water on the SnS provides an extra barrier between the fire and the meat. I’m sure there is some merit to that. I already have a SnS so I will keep using it, but if a friend just starting out asked me for advice I might say the Slow & Sizzle.

    @@shumardi1 Yes, exactly. The water trough does cut down some of the charcoal capacity. I agree 100%…stick with sns….no need to buy anything else. If you have bigger needs, meaning cooking with multiple kettles then maybe try a smoke and sizzle. Otherwise you’re good to go. I see no differences in the end result of your cook. It doesn’t make you a better cook…lol.

    Never had one of those . We looked at grocery store and they don’t have it. Also where do you get your sharp knives?

    You won’t find them in your typical grocery store. I have to buy them online….this one came from Snake River Farms. But Meat N’ Bone or 44 Farms, Porter Road, Wild Fork Farms or Creekstone Farms are other online options. As for knives, I get them on Amazon. Dexter Russell or Mercer brands. They sharpen easily and they are extremely affordable. Thanks for watching!

    The Slow and Sear will protect your kettle from burnout caused by piling hot coals against the side of the kettle. A large piece of heavy-duty foil will cover the other side of the bottom completely. That's the side where all the grease will fall depending on what you're cooking. When the Pitt is completely cool after the cook you can dump all the ashes in with the grease and wrap it up in the foil. Stick it in the trash bag and throw it away. Easier to keep the kettle clean if you don't mix grease and ashes in the bottom of it.

    Great question. If you mean from starting the coals to pulling the steaks, about 60 minutes. The steaks themselves took about 15-20. They were thin and cooked quickly once I got the smoke on them. So, 15-20 minutes for fire prep, 15-20 smoke application and 15-20 finishing to temp and searing. I didn’t actually time it but these are pretty decent guesstimates. Thanks for watching and for asking!

    Absolutely! It just won’t cover the bottom grate up completely. I’m comparing the base of the Smoke and Sizzle, which fits into the bottom of the kettle perfectly, with the Slow n Sear…so to make sure I’m comparing apples to apples, I discuss the purchase of a drip pan that also fits the bottom of the kettle completely. But yes, you absolutely can just use a disposable aluminum pan. To me, it’s just something else to make sure I have handy, as opposed to just grabbing the smoke and sizzle and get going.     Those look awesome! I cook alot on the very same weber and love it. Got a cast iron grate off amazon thats been a game changer. Ive struggled with the crispy crispy wings without deep frying, so im gonna try your method for sure! Maybe i missed it, but what was the total cook time? Cheers from Mississippi

    Hey Ryan, thanks for watching! You didn't miss it...I just neglected to say (was still pretty new at this and forgot to say!). The total time with the vortex may have been 40 minutes. The vortex is my favorite way to do any chicken. I don't have a cast iron grate but have seriously considered one. Can you share a link for the one you got? Thanks! And thanks again for watching!

    @grumpysgreatoutdoors They have a 22" one just like this, the link showed the smaller. There's a few different patterns out there too. Just do a search for 22in grill grate. It sure make a steak look good with the perfect sear marks. I ordered up a vortex, excited for the outcome! Thanks for sharing 👍

    Good comparison. The Slow & Sear has modularity; you can use the drip pan as a stainless steel griddle over top of the charcoal basket, you can use the charcoal side without the drip pan for different air flow in a two zone, and you can also remove the water channel and use the drip pan as the water reservoir, allowing more charcoal. Whether that justifies the higher initial investment is up to the individual, of course; both look like excellent solutions. Great brisket off the kettle!

    First, thanks for watching. Very insightful ideas and thoughts. Love it when people have helpful comments like this. I think what I love about the smoke and sizzle is that it’s just so easy….grab it and go….I don’t know about other people, but when I start having to look for 2 or 3 different parts in my garage…uh oh. lol. All joking aside, I like both products and use both. It’s just the simplicity of smoke and sizzle that does it for me….and of course, cost doesn’t hurt! Thanks again!

    I made mine and wow. I cannot believe how well it cooks Chicken, pork it’s fantastic I might downsize my living so I am thinking about parting ways with my Egg, Drum and Pellet and going with Weber Kettle only

    @@ksmith114 how cool is that…you made it. I love my kettles, I just wish they had more space. I have 5 of them because of the little space. I love my offset too…but the kettle is more convenient. For example, I’m cooking chicken thighs with the vortex right now. It took 35 minutes. Super simple super easy and super good. I feel ya with the downsizing and choosing the kettle!
