    May be a dumb question but what does spritzing do?

    Not a dumb question at all....spritzing helps minimize drying out and burning. But, more importantly, it keeps whatever you're smoking wet and wetness really helps to absorb smoke. Bad analogy here..but it works...what smells worse...a dry dog or a wet dog? Now imagine a wet dog going thru a bath of pecan wood smoke...lol. Another alternative is to put a water pan in the smoker and have the heat evaporate the water to create a humid environment and attract smoke that way. I just usually like to spritz.

    Depends on the space you have available. If you only have room outside for a small table(think 28 inches by 72 inches) you can get a full size 22 inch kettle and build a table with a cutout to fit the grill. Make it a two birds with one stone deal. If you are in an apartment with restrictive rules about grills, Grumpy has it right, a table top jumbo joe/smokey joe/SnS table top grill... you can clean them out and store them in a closet, carry them up and down stairs. Weber also makes a 14 inch Smokey Mountain smoker that is compact and portable, just big enough for a whole large chicken or pork shoulder. Instead of thinking of space outside, think of space for storage, since you can always take a portable grill or smoker to a park to barbecue, put the meat in a cooler and take it home after. Just a few ideas for options.
