How much time start to finish?

Great question. If you mean from starting the coals to pulling the steaks, about 60 minutes. The steaks themselves took about 15-20. They were thin and cooked quickly once I got the smoke on them. So, 15-20 minutes for fire prep, 15-20 smoke application and 15-20 finishing to temp and searing. I didn’t actually time it but these are pretty decent guesstimates.
