    Great video! Subscribed! Thank you so much for explaining about waiting for the smoke to clear before adding the protein. I ruined my first low n slow by slapping my ribs on as soon as the temp stabilized but before the smoke was thin and blue! So many KZreadrs don’t stress the importance of ensuring both the temp AND smoke are where they need to be before the meat goes on.

    @@grumpysgreatoutdoors I must admit, I have three. Two 22's, and a 26", along with a WSM 22. I only just this month picked up a sns xl for the 26"(my first sns for any) and will be trying it this upcoming year. Hope you keep making and sharing videos sir. HAPPY NEW YEAR. 😎 FYI~ For the 22", I can recommend the Aura KettleZone grate and ceramic setup. The stock charcoal ring from the Weber WSM 22 inch also fits perfectly over the kettle grill charcoal grate, and I have used that setup for smoking as well to open up more of the cooking area.

    That’s awesome you have three! I have 2 of the premium deluxe models. I only just got the 2nd one about 2 months ago. I have been smoking on an offset smoker for awhile now, because of the cooking area it provides. But pound for pound, I’ll take my kettle any day!     Why do you use butcher paper for the wrap?

    Butcher paper allows the meat to breath and doesn't cause the bark to get soft and swampy. It also allows you turn the heat up a bit and push through the stall. Lastly, wrapping it in butcher paper prevents the meat from getting too much smoke and getting rancid. Some folks don't wrap at all and that's an option if your smoker has enough convection to prevent too much smoke and over cooking. Some use foil and I just find that foil kinda turns your meat soggy and your bark has no bite...ha! Thanks for asking!
