Taiji ́s Kitchen

In my channel, I show authentic but alternative Japanese home cooking, which can be make with the ingredients that are easily available outside of Japan.

I am a normal Japanese guy, who loves and enjoys cooking and of course eating. The goal of my videos is not to impress people but rather to inform about and motivate people to cook Japanese Food. If you say ”oh that looks actually easy, I’m gonna try it myself!” then my goal is met.

My cooking is no means traditional, professional nor fancy: it is rather everyday practical Japanese home cooking, since I have learned all my cooking from my mother, grandmas and cooking for myself..

    I never realized I was eating Oden (or at least something Oden-inspired) as a kid! My Taiwanese grandmother grew up during the Japanese occupation of the island and passed something similar to this to my mother who made it tons for myself and my brother when we were kids. I'm gonna try and make some this weekend. 😁

    I lived in Japan as a teenager. The first time I had dinner at a Japanese friend's home, his mother asked (in Japanese) why I wasn't enjoying the meal. I was eating quietly and my friend explained that it was a sign of respect and enjoyment to slurp when eating. His mother had the biggest smile the first time I produced a loud slurp!

    14:25 never put your wet part of chopstick on the table / serving plate for hygiene reason. Can rest it on the plate so that the wet part is not touching anything. In addition one important manner is no talking when you have food in your mouth.

    I have a Hybrid Chopstick, Its stainless metal but with a Japanese Style shape. The reason I use the metal one is for re-using, My parents keep throwing away the wooden ones when I want to keep using them for a bit longer. So I have no choice but to get a re-usable chopsticks.

    This looks amazing! But with that amount of matcha how are you not stuck to the ceiling? That was more than a couple of cups' worth.😄 It doesn't matter to me because I'll eat it all anyway...and then, I'll go run up a mountain.🏃‍♀

    Love seeing insight into Japanese men’s homes. My favorite parts 2:37, 11:15, 11:32 😍, and 13:05. I love that men’s shoes come off inside the home traditionally.

    When stationed on Okinawa as a US Marine, I was at dinner at a restaurant with other American friends, and committed the tate-bashi faux pas. My friends were horrified, and immediately corrected me.

    there's such thing as coconut yogurt?? well however it may look, this is coconut milk, in German Kokosmilch, which you can see on the label on the can; 03:18

    there is creamy coconut milk being sold in germany, its all cream

    In the US there’s coconut milk and coconut cream sold in cans. The cream is just like what you eere using but coconut milk is much more liquid.

    the watery part is in the bottom as you can see in the video (and as taiji also describes) the milk of the coconut tends to solidify and seperate from the water, the water at the bottom of the can tends to be very bitter and not very good tho

    I have something to add to this. The staple food, rice, has no flavor. We don't eat just rice. The order doesn't matter, but after putting the rice in your mouth, put the side dish in your mouth and mix them in your mouth. I believe most Japanese people unconsciously do that. Japanese people make adjustments so that the rice and side dishes run out at the same time. When I watch people from another country eat Japanese food, sometimes only the rice remains at the end. Such people will probably hate rice. If a Japanese person were to do that, I think it would be seen as unplanned by others. On the other hand, if a person from another country does good finishing, you will be seen as a smart person. Also, when I'm chewing my food, I put small pieces of rice in my bowl in one place. So you can eat it without leaving any residue. For Japanese people, people who leave rice in their own bowls at the end have doubts about their intelligence. One more thing: Start your meal with the soup. Then dip your chopsticks into the soup. This will prevent the rice from sticking to your chopsticks.

    Interesting. I make Sushi and spent a long time reading up on all the proper ways. The interesting part that I found though is the last one number 8 watashi-bashi. That one I have seen used in a few martial art movies. Oddly I seen this in a few Japanese movies that was a bit confusing. I was wondering if you know if they do this in the movies for any specific reason or did someone mess that up.

    I'm so glad we use forks and spoons. I don't need a "proper" way of holding those or a list of moves just to pick it up

    Bubble tea has been huge in Oz for perhaps 20 years or so (maybe much longer). Obviously with the high Japanese influences in places like the Gold Coast and Sydney, we LUCKED OUT with bubble tea. YUMMY!!!! Also, in Oz tapioca and sago have been supermarket staples ever since I can remember and I'm 50.

    We have all those styles of chopsticks in our house but until this video I did not know why they were so different. I always preferred the fine tipped chopsticks for the reasons you mentioned and now know they are Japanese style. Thanks!
