How to make Home-made Udon from scratch 〜手打ちうどん〜 | easy Japanese home cooking recipe

In this video, I am showing how to make Udon from scratch, from flour, in Japanese called Teutchi-Udon. I am also showing a variation of Udon called Kamaage-Udon, where Udon is served in hot water with different condiments.
In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients that are easily available outside of Japan.
Ingredients for Home-made Udon (2 Portions):
Udon noodle:
- All purpose flour 160 g
- Starch 40 g
(also possible with 100 % flour, so 200 g of flour)
- Salt 5 g (1 Tsp)
- Water (warm) 90 ml
Mentsuyu sauce:
- Dashi stock 5 Tbsp
(also possible with 5 Tbsp Water + 1-2 g Dashi powder)
- Soy sauce 1 Tbsp
- Mirin 1 Tbsp
(or 1 Tsp Sugar)

    Thank you again. This was delightful. I like your method for heel/step Kneading on the floor. Wondering how long will fresh noodles last in the freezer and also, how long will the Mentsuyu sauce last in the fridge? I’ll find out I guess.🙏🥰🍜

    I wonder if a manual pasta maker would work to roll out and cut the dough? Also bread flour has higher gluten so that might be a good substitution

    I am definately going to it like this, but isn't it traditional to use buckwheat flour? Do you live in Germany, since you use wheat flour and salt that is german.

    I noticed that in your videos you never have and use a napkin. As the cuisine has a lot of soups and liquid ingredients in general and I'm thinking also about all those slurps, how do you keep your mounth/face clean/what do you use? =)

    we just don't have the culture to use a napkin, this goes also to most of asian cultures. I never needed one in a meal in Japan. for us, we don't understand, why someone would need a napkin. the only explanation I can think of is that everything is in bite size, so that it goes straight in the mouth, without touching the lips. to pick up with chopsticks, the food cannot be bigger than bite size.

    5 grams is quite a lot of salt. Is some of it leeched out when cooking?

    I thought so too, but the result does not taste salty at all, dont worry. probably due to the reason you mentioned. if you dont want to, then you can of course reduce the amount as well.
