    I have been wanting to make this recipe. How long did Tou boil the chicken? I read somewhere not to wash the raw chicken because of bacteria may spread in the sink.

    Hi Sue, yes, you're correct that washing chicken can spread germs, however we rinsed it as there was quite a bit of blood in the carcass. It's fine to rinse meat, poultry and fish but always make sure you properly clean surfaces afterwards.

    I have exactly the same pestle and mortar. The best hainan chicken I had in Bangkok is pratunum chicken rice. We don’t have the same chicken species in America so it’s so hard to get the same quality of chicken rice. Thank you for the sauce recipe.
