CLAM Stir Fry TO WARM Your Cockles | CLAM Pad Prig Pao หอยลายผัดพริกเผา
Hi everyone today's video is all about using the chilli paste sauce that we made a few weeks ago called nam prig pao. Chef Tou will be showing us how to use this sauce to stir fry clams, making the most amazing dish that you can eat with rice or just get stuck in with your fingers. But actually this recipe is very easy and doesn't require too much work. This dish also utilises evaporated milk to add a creamy, rich consistency, amazing!

Here's the recipe:
🟢For the stir fry paste:
9 Thai birds eye chilli
7 Cloves of garlic
🟢 All other ingredients:
1 Kg Fresh clams
1 Tbsp oyster sauce
1 Tbsp fish sauce
1 Tbsp sugar
3 Tbsp Chilli paste (nam prig Pao)
3 Tbsp evaporated milk
1 Large sweet chilli sliced
1 Whole stem of sweet basil leaves
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.

    Can we put raw clams and stir until they cooked and add evaporated milk or cream and basil later?

    You can if you feel comfortable to ensure that the clams are cooked properly while doing everything else at the same time
