As an Asian.. why!! Just keep the green onions out in the open and only cut them when needed. They last like 2 or 3 weeks like this.

If you don't eat the roots....Just put them in soil instead of just water.... they'll regrow and spread. You'll never buy green onions again (during warm weather anyway).

I think it may disturb you to know that I was taught to use the part you call "root area" and discard the stalks. I have chosen as an adult to use much more of the stalk than my mother ever would have, but I would never sort by color.
