    rice noodles + broccoli + tofu cubes in boiling water > drain 95% of the water > mix in peanut butter + chili garlic sauce or gochujang + tamari/soy sauce + lime juice for peanut noodles. legit my fav thing edit: did not watch this part of the video yet when i commented lmao. basically the same thing!

    i found a recipe online last year for a 'mexican one pot quinoa bowl'- you put a can of beans, a can of corn, a can of tomato sauce, and a cup of quinoa, and a cup of water/broth into one pot with some cumin+garlic+other spices, and it all just simmers for 20 minutes until it's done/the broths been all absorbed! it makes SO much food i usually have it for like 4-5 meals.

    Thank you! I appreciate frugal meals and those free from ultra processed foods, so I am not buying any fake cheese. My favorite vegan meal is a Lebanese dish my mom taught me to make called "Mujadara". It's made from lentils, rice, onions, olive oil and salt, nothing more. So good with a big salad!

    Add to rice cooker: rice + frozen veg + tofu in any form + beans of some form + bouillon or seasoning to rice cooker - eat when done - voila

    I always keep boxed pasta and jarred sauce in my pantry for when I'm broke and depressed and have no energy to do anything culinary, and I also like pasta e piselli and khichidi for their one pot meal power. I'm also a big fan of ume vinegar/umeboshi paste as a vegan substitution for anchovies/fish sauce.

    not a meal but a lazy hack, i use cabbage in all my meals instead of lettuce now bc it lasts in the fridge literally forever and all my lettuce always goes brown before I can use it all, honestly I prefer it now!

    I like to get the bagged salad kits that go on sale 2 for $5 a lot and then I eat a whole bag for lunch by cutting it sideways and making the bag into a bowl. No dirty dishes!

    The nice thing about that is that it's super easy to add stuff to it to make it more balanced without too much more effort. Like throw in some spinach (can be frozen) and some tofu and some sliced hot peppers (can be jarred or canned) and some sesame seeds & oil. Suddenly, your meal is way more balanced and way tastier

    Baked penne. All you need is noodles, tomato sauce, and vegan cheese (for topping before baking so if you have like barely any cheese in the bag left it’s perfect for that) and I just add some veggies into the sauce like pepper and mushroom. It’s even better as leftovers the next day too so you get like 2-3 meals out of it.

    Emily you have to try soondubu! thats my go-to lazy and filling meal. i always have frozen onions, frozen diced zucchini, and either dehydrated or frozen shiitake mushrooms. you add 1-2 handfuls of each of them to a pot with 4 cups of water. if you have potatoes you can add them in too. then add gochujang and some vegetable bouillon. if you want it saltier you can add msg, soy sauce, and/or salt. i also have a jar of pre-minced garlic and i put a tbsp in there. bring everything to a boil then simmer until the broth is a little reduced and the veggies are cooked. then add soft or silken tofu to it, turn the heat off and add a few drops of sesame oil. you can top with scallions. serve with rice and kimchi on the side. another fun snack i like to have is simply rice with kimchi that i put into seweed snacks. i fold it up like a taco. you can top with some spicy mayo

    I love videos like this -- I have ADHD and this is how I cook about 80% of the time lol. I've lovingly started calling it "chaos food", because I'll start with something super basic (ramen & pesto sauce on pasta are common culprits) and then just toss in whatever I have in my fridge or pantry that sounds decent / like something my body needs! For carrots -- I just peel them into a bunch of thin strips when I need them, and then tear those strips into smaller pieces, because I hate cutting them into matchsticks so much haha. And I've found that pre-cut / baby carrots don't last as long in my fridge as whole carrots do.

    anything pasta i enjoy when i feel way to unmotivated to cook. my go to sauces are a tahini and soy sauce with some nutritional yeast (maybe a lil lemon if im feelin it), a garlic onion red pepper lemon situation cooked in olive oil, and lastly some pre-made marinara of ur choice with a mix of canned sliced olives and nutritional yeast. Overnight oats r nice to have in the fridge and they can be savory(flavored w veggie bouillon or miso paste with an assortment of ur fav toppings) or sweet(my fav flavors r coffee cake, apple pb pie, and blueberry vanilla. lastly any curry, choose ur fav curry base(i use coconut milk and cream to make them creamy) and chop up some potatoes, carrots, onion and/or broccoli with a protein of ur choice and boom u have a stew that can feed u for a week.

    one "lazy" meal i honestly kind of really like is impossible nuggets, minute rice, and orange chicken/teriyaki/sesame chicken/etc sauce (bought pre-made in the international isle in the grocery store). i air fry the nuggets and microwave the rice. then i usually cut up the nuggets a bit to make them more "bite sized" but that's probably not necessary. if i feel like dirtying up multiple dishes, i'll toss the nuggets in the sauce in a separate bowl and then put it on top of the rice, but i've also absolutely just put it all in the bowl i made the rice in and mixed it up together. you could also definitely add in some frozen veggies or something to make it more nutritious

    Thank you for these ideas 😍🤩 some of mine are rice bowl with frozen brown rice, kimchi, coleslaw mix, and baked tofu ( I buy the already baked one) and avocado. If I want to chop I would add cucumbers and radishes. Plus Sriracha mayo on top Toast with peanut butter, sriracha and cilantro. Avocado toast and put some greens on it oatmeal with frozen berries. I just add hot water to the bowl and don't cook oatmeal on stove top. Kimchi grilled cheese or just regular grilled cheese Sandwiches with vegan cheese and veggies and spicy mustard. Pasta and marinara. Also recently tried huel hot and savory. It was the spicy Korean instant cup meal. Ot was really good!

    It happens to me that everything Im running low on ingredients, doesn't matter if its because I have a low budget or havent gone to the supermarket, my creativity sparks! Its unbelievable. Whenever that happens, I end up with great and delicious meals that satisfy my soul!

    OMG so I'm totally in this situation right now, and my go to is tortillas, so to open the video with you holding tortillas is so comforting!! Lmao My go to is hot sauce tortillas (literally a taco bell packet on a tortilla...), sometimes canned beans on a tortilla. I also do avocado toast, pasta with tofu meat sauce, and oatmeal!

    Honestly huel shakes get me through my biggest depressive spells. Also rice with edamame and stuff, or pasta+premade tomato sauce+slightly mashed kidney beans, or vegan meatballs. Ramen+toppings... Porridge! I've been thinking about these kinds of meals a lot so it's great to see a video for it :)

    This is so practical and down to earth! Awesome content. I just did Abbotts crumbles, frozen spinach and broccoli with sit seasons and Jovial pasta as kind of a pantry/freezer meal. I would swap out Abbotts and sit seasons to make cheaper next time.

    My go-to struggle snack is a peanut butter banana roll up with chocolate chips. I spread way too much PB on a tortilla, sprinkle it with chocolate chips (I get Guittard semisweetchips from winco for about $4 and never use them for anything else) and roll it around a banana. If I have no bananas, I toss way too much peanut butter in a bowl with a cup of vanilla silk yogurt, mix it until it looks like I'm eating a bowl of peanut butter and sprinkle chocolate chips on top. Burritos like this used to be my go-to meal but for some reason, the idea turns my stomach now. If this ever happens with my peanut butter and chocolate chips, I fear I may waste away.

    My ultimate lazy vegan meal is shredded wheat and soy milk lol. Second is peanut butter on top of a banana, only dish used is a knife to get the PB. After that, if I’m willing to cook it’s defo pasta and sauce.

    my go-tos are peanut noodles using spaghetti for noodles and peanut butter to make the sauce, and pita bread or english muffin pizzas in the toaster oven. i also make a big container of plain quinoa each week and keep it in the fridge to scoop out later for on top of or as the base for a salad, or to mix with chocolate and sweet stuff to make quinoa "oatmeal" for dessert or breakfast. you can mix it into just about anything to add a hidden protein source. i also like to peel/chop as many veggies as i can at once to keep in containers in the fridge so they can easily be snacked on or quickly cut up to put into other things. i do this prep on days i have more energy/time/motivation and it really saves me on those other days when i have less spoons :,)

    So motivated me helps unmotivated me by making a big batch of red lentil soup and freezing it in double portions. Then I can reheat and dump in some spices (curry powder, berbere, or just hot sauce) and eat half. Half another day, maybe with leftover rice or mixed into ramen. If I don’t have any of that, I heat refried beans in the microwave then dump in salsa and cumin, then eat it with tortillas or chips.

    the kite hill unsweetened greek almond milk yogurt is a really good sour cream substitute! It also has probiotics and I think some protein as well :)

    In some Central American countries we eat a pickled cabbage slaw with tacos/pupusas/as a side, so it's not totally weird to put it in a burrito!

    I just got a box of couscous from grocery outlet because I always considered it to be kind of a fancy grain but it’s actually so cheap and so easy to make so I’m trying to figure out ways to incorporate it into my meals staring with a zatar tofu, hummus, veggies, tofu wrap that I’m making as I watch this. But I’m also thinking it would be super easy to make a little dressing and use whatever protein and veggies I have for like a salad.

    I love couscous and making a salad out of it is so good! Cut up some red onions, some cucumber, and some tomatoes in it with some vinegar or Italian dressing. I also like to add sliced pepperoncini and capers but that sodium can add up quick when you do that. If you haven't tried capers yet, definitely do! They're so brine-y and I love the texture. I definitely recommended the non-pereil capers over the rest!

    it also works really well as a grain for bowls. just prepare the couscous and then put everything in you want. and if you have stuff to defrost, that doesnt need to cook e.g. peas you can just throw them to the couscous and then put the hot water over the couscous. what is also really cool is that you can even make sweet things with couscous :D just put into the couscous sugar, cacao powder or whatever you like and then put the hot water over it :D

    I watch these while running the treadmill. Is that weird? Just did a lil dance and added this to my run playlist 👐 yippee! I eat like I'm struggling already. Beans from scratch, rice, cilantro, hot sauce. Tofu scramble with beans, rice, & broccoli or brussel sprouts. Fresh veggies are actually cheap. Some homemade hummus and cucumbers are cheaper than bag of chips these days. Costco liquor instead of drinking out...ever.

    @kellybraun5013 I thought about your comment and I see what you're saying. It's not supposed to be an ASMR vid so my original comment was weird. I was getting ready for bed when I saw her upload and decided to comment about my excitement. Good asmr is exciting. If you know then you know. I think I saw something recently in an interview with Dr Andy Galpin (an exercise physiologist I believe) about calm music being better for intense workouts. Running is intense for me. And I'm really just jogging at 3.5mph, lol.

    I usually find myself resorting to making lentil tacos, or a bowl of oatmeal. Sometimes I'll make a bowl of grits with plant butter and vegan cheese and toss some nooch and tofu in for protein.

    Whatever I can microwave is what I need when I have no energy to make something. Frozen meals if it works for your budget or whenever I have leftovers that I don’t want to eat right away I ALWAYS freeze them - it comes in handy when you have zero energy and just need to eat - try freezing it in individual portions on a baking sheet or something flat so after it’s frozen you can shove it in a freezer bag and just take one out when you need it.

    Most are lol. The only non-chill vegan person I've ever met was when I was a nanny for a pregnant mom on bed rest, but her one kid had a bunch of food allergies to non-vegan stuff like eggs and dairy and she was also on bed rest with 3 little kids. Her husband wasn't even vegan tho and she didn't seem to mind that

    Make rice noodles instead. They just need to soak in hot water. Or make couscous, also just need to soak in boiling water (use the kettle for that )

    Aldo you can cook practically evething in the microwave, also pasta. Just put the apdta in a microwave safe container with water. And let it cook that way. Can do the same eith rice. Also potstoes and veggies can be cooked in the microwave

    the brand is Country Kitchen my mom got it for me when I moved out so idk the price! but my other lil grey speckled pot is the same brand. I found it at a discount store.. can’t remember where but either Grocery Outlet or TJ Maxx?

    Add seaweed to your food. Also delicious to fry some zucchini with soy sauce or tamari and ripped up nori sheets, you can add some sesame seeds or sesesame oil too if you want
