im not vegan, but ive had to use egg replacements for either running out, not having enough, etc., and i swear, the BEST replacement ive come across (as an avid baker), is 2 tablespoons water + 2 TEASPOONS baking powder + 1 teaspoon vegetable oil. this is equal to one large egg, and it genuinely rarely changes the texture or taste. it's crazy

Interesting! Do you use this even if the recipe already calls for self-raising flour or baking powder?

@@julietapolenta8764 i can't use self-rising flour (celiac) BUT even if it calls for baking powder normally, i still use it and it hasn't noticeably affected what i've made! it's actually really cool!

i was watching a decluttering video last night and the person threw away so much food in their pantry and low key crushed me to watch. food waste is such a big problem. i worked in restaurants for years and saw so much thrown away so i try to never waste food. i REALLY appreciate all the innovative ways to use up food! it lifted my spirits ❤
Veggie tray soup is actually GENIUS. I always get sent home with veggie tray leftovers 😂
Re: french fried onions. All I could do was sing “go to the store, buy a bottle of hoisin sauce, go to the fridge oh no! I had a bottle of hoisin sauce!” 😂
Thank you for the reminder to clean out my pantry lol. When you were making the tofu nuggets, you can use mayo as a sort of “wet dredge” and that will help with the fat you need since mayo is mostly oil. Like marinate in whatever sauces, then rub mayo all over and the breadcrumbs with stick to them really well.

emily youre 100% right! The outside of a banana is not clean. i work in a grocery store and i can say first hand that it is not a clean place, always wash the outside of ALL produce even if you dont eat the skin/peel (avocado, banana, orange etc.)
If you have extras of stuff you could donate some of the unopened non perishables to the food bank in your area! 😊😊 I really appreciate your ability to use as much of your food/ingredients as possible. I wanna try to get better at that myself.

Yassss cereal hack ! My grandma & I call it “cereal cocktail” we just throw in a bunch of different cereals. I’ll have to test out putting the PB at the bottom of the bowl instead of on top 🤔
if youre baking tofu nuggets you can try toasting the panko first with a bit of oil/butter to make them more brown and to add more fat

I’ve been putting pecans on top of my oatmeal in the morning with some pb- great way to use them! Also pumpkin seeds would probably be great as well! Just another idea for how to use your nuts. 😅
I have replaced egg in boxes brownies by replacing the water in the recipe with oatmilk (or whichever plant milk) and adding a table spoon of lemon juice/ ACV/ white wine vinegar to make it like buttermilk
You can sub applesauce for the eggs in the cake mix cookies! My bestie makes them that way. He just adds about the same volume as the eggs. I dunno if that actually helps, but I always have random applesauce cups in my pantry, haha
You are so creative. The way you adjust on the fly is inspiring me to dig in my pantry and do some magic.
I have been roasting acorn squash and filling it with a thanksgiving seasoned filling with rice, dried cranberries, mushrooms, nooch, everything but the leftovers seasoning from TJ's, (basically whatever I find in the fridge) then I top it with vegan cheese, french fried onions, and some green onions with a sriracha drizzle. Oh, and I add honey mustard dressing in there too for a nice tang. It's so good!

Also, just throw regular sugar in the blender and it becomes powdered sugar 😊
To make your baked panko breaded stuff oilier, you can toast the panko in a pan with some oil, then use it to bread stuff
I like to add oil to panko when I'm breading things so it kinda gives it a bit of a pan-fried texture and flavor.
spray oil is great for when u waNT extra crisp before bake or air fry
also tho always a fan of making pantry lists! its the only way i can manage to make something that isnt right in front of my face. i also make one for the freezer and put it on the fridge.

OKAY SO u gotta try frying ur panko in some oil on a pan (till it’s a lil coated n crispy) and then coat ur tofu nugget and bake !! It gives the effect of “frying” it

agree w other comments that egg replacers gotta have some baking powder at least and maybe other things. i love the bobs red mill egg replacer. works in every recipe and lasts forever
also veggie tray soup is very smart. recently had a homemade veggie tray at a party and actually it went over really well but i think the key is a really good homemade dip (like a greek yogurt ranchy thing) and then only veggies you really like and then cut em nice and pretty. like no one wants raw brocc or cauli, but some radish and cuke??? (i understand the point of the veggie tray is that u can just buy it, but just saying i recently ate a frigg ton of raw veg bc of a good dip!)
Sometimes, we just give our extra food to neighbors or the food bank lol. It accumulates faster than we can eat it 😅

I can’t tell you how many soups I’ve made from how many veggie trays I’ve been offered after gatherings. I have genuinely lost count.
The only way I’ve gotten my tofu more “oily” after coating them in breadcrumbs was by panfrying them in oil. And I’ve only ever done it with them coated in flour instead of breadcrumbs but it turned out really good. They had a greasy fast food quality to them. I have yet to figure out how to get the same result when baking or air frying.

Is it a rule that all families give the vegan the veggie tray leftovers? It is so sweet but also sometimes has “you do vegetables, right?” vibes I’ve done the soup thing before but I usually make a stir fry, or sauté them and use them in a burrito bowl because there is often guac and salsa also left over from the party
If I'm not mistaken the kind almond butter granola has honey in it.. its not vegan.

just looked online & it says $1668 is the avg price for the avg size apartment (927 sq ft) 🥲 its more doable with a roommate of course but i want to be able to live alone so im strugglin
