Struffoli | Pignolata | how to make Struffoli.

#Struffoli #pignolata
To print the recipe: alessandrasfoodislove.com/str...
Ingredients:
4 cups of all-purpose flour
6 jumbo eggs. If smaller use 7
1/2 tsp of salt
2 cups honey
Peel a Lemon and or tangerine/orange
1 tbsp of sugar
Nonpareil/sprinkles
4 cups or more depending on your frying pan Vegetable oil for frying
Directions:-
Step#1- Mix flour, eggs, and salt in a hook attachment mixer. Mix for at least 5 minutes until the dough forms a small and becomes elastic. Should be soft to the touch.
Step#2- Cover with a damp paper towel and let it rest for 30 minutes.
Step#3- Now cut a small piece of dough and create a long thin roll. Do not add any flour to the work surface when rolling the logs.
Step#4- Now cut into small pieces and move on a floured surface so they don’t stick together.
Step#5- After I do that I shake excess flour in a cold err and place the struffoli on paper plates. Each plate should contain enough struffoli to add to the hot oil. This avoids hot oil splattering.
Step#6- Continue until the dough is done. I like to use a wok. Something about the way it’s shaped, it avoids oil from boiling over.
Step#7- Get your oil hot to 365 degrees Fahrenheit and drop your first paper plate with the struffoli gently in the hot oil.
Step#8- Use a skinner to stir. Do not walk away because they cook quickly.
Step#9- Drain them first in a colander and then on a large cookie sheet covered with paper towels.
Step#10- Finish frying and don’t forget to add fresh oil if needed.
Step#11- In a large pot on medium heat add your honey, sugar, and peels. You can also add a couple tablespoons of limoncello.
Step#12- Bring to a boil for 2 minutes. Now remove from the stove and add all your struffoli in until well coated.
Step#13- Now quickly fill your plates and shake the sprinkles on top while hot otherwise they’ll never stick. I work over the sink because the sprinkles fly everywhere!
Step#14- You can shape it like a Christmas wreath or tree. This year I made small individual cups to share the love.
Buon Natale! 🌲

You are one of the only authentic Italian cooking channels around. This is how my mother makes them. The thing is old chefs who have been doing this forever don’t always know how to explain all the steps, they just hope you make it with them and observe lol Your explanation of how to prepare the dough is nothing short of magnificent. Thank you.

These look wonderful! I’ve never seen the dough made with just flour and eggs. I’m going to try it this way next time. I was close to my aunts growing up and have a lot of their recipes which I continue to make in honor of them and to pass down to my children and grandchildren.

Alessandra, may I share something crazy that happened? I decided to do my Struffoli tonight. I watched your video several times and was ready to go! Everything measured out and ready, I put my 7 warmed eggs in a bowl and all the other things. OK., so I made the pile of flour on the counter but I don't have a nice granite one like you. Just an ordinary counter so I used my glass rectangle that I use as a good surface. I made the well in the middle of the flour and in went the eggs. Ok so I needed the fork which was below in the drawer. As I get out the fork, I see the egg closest to me in the well start to make a path OUT of the well toward me and the edge of the counter! I tried to catch it (without thinking) and ALL the other 6 of the eggs fly out with it! Eggs and flour erupting all down to the floor! Luckily I had shut the drawer! I wanted to cry. But I did not. :) I got lots of paper towels and cleaned up the MESS! Yikes! Thankfully I had bought an extra dozen eggs and had lots of flour too so I started over. This time I used a very large glass bowl. It worked perfectly and I continued on with the recipe. I am on a break now with a small glass of brandy and just have the honey left to do. Just thought you and the others might get a good laugh at the image of someone who never tried the flour mountain with the eggs in the well. I have to laugh at myself too! I bet my Sicilian grandma is saying some choice words and laughing too :)

My Dear Mary-Rose I’m between laughing and crying at the same time. 💖 your Sicilian grandmother must’ve been using a very colorful expressions from up there. 😂😂I must also admit been there and done that. A few weeks ago I spilled the oil holder all over the kitchen stools. I had to just reupholster them. 🤦‍♀️ Enjoy the brandy and making the struffoli plates. I didn’t even start mine yet. :( Buon Natale and thank you so much for sharing. 💚🤍♥️💫🎄🎁🎅🏼🤶🏻
