Don’t add flavacol after. Add with oil. He does it a terrible way:) and be careful a quarter teaspoon goes a long way. Can easily make it too salty. And I came to look at the lid and how full of water it was. Looks like it still makes the top ones soggy.

Great vid. Looks delicious. I'm wondering if pork belly or thick sliced bacon can be used as a sub for the guanciale. Prayers for you for a speedy recovery after your surgery.
Thanks so much! You can use bacon or pancetta, but they are from the belly and doesn’t produce as much rendered fat as guanciale, which is imperative for a good thick sauce when mixed with the starchy pasta water. Guanciale comes from the pig cheek, which is mostly fat. I’ve used pancetta before and it was not as good as with the guanciale. It’s hard to find though. I finally found a local Italian market locally that stocks it. Thanks for the prayers and for watching.

Hey Richard! That sandwich looks so good ! Here’s a tip my Italian grandmother does for the same sandwich.. marinate the tomatoes in the oregano olive oil and add salt to the mix! You can even eat the tomatoes as a snack or on avocado toast it’s amazing !!
