INSTANT POT GROUND BEEF CABBAGE SOUP

Easy Instant Pot ground beef cabbage soup recipe. A perfect choice for those cold winter days.
2 tbsp. olive oil
1 lb. 80/20 ground beef
1 medium onion, chopped
4 garlic cloves, minced
½ tbsp. Italian seasoning
1 tsp. salt
½ tsp. black pepper
3 celery ribs, chopped
3 medium carrots, chopped
1½ - 2 lbs. cabbage (5-6 cups), 1 inch chunks
4 cups chicken broth
15 oz. can crushed tomatoes
15 oz. can diced tomatoes
1 tsp. white sugar
1 cup roughly chopped Italian parsley or celery leaves
Salt and pepper to taste
Instructions:
Heat the Instant Pot on sauté mode. When the display reads “HOT,” add the olive oil and ground beef. Use a spoon or spatula to break up the meat while you stir occasionally and cook the ground beef until fully browned and no pink is showing.
Add the onion and cook for a few minutes until softened. During the last minute, add the garlic and stir until fragrant.
Season with salt and black pepper. Stir.
Add 1/4 cup of the broth and scrape the pot bottom to deglaze.
Add the Italian seasoning. Stir for a minute until the garlic is fragrant.
Add the celery, carrots, cabbage, and the remainder of the broth and stir to combine.
Layer the crushed and diced tomatoes over the top, spreading them around without stirring up the rest of the ingredients.
Press the cancel button.
Replace the lid making sure the valve/switch is set to the seal position. Press the pressure cook/manual button and set to high pressure. Adjust the cook for 10 minutes followed by a 15 minute natural pressure release. It is possible for all of the pressure to be released during the natural release. If it doesn't do a quick release and wait for the lid pin to drop before releasing any remaining pressure and reopening the lid.
Remove the lid and stir in the sugar, celery leaves or parsley and taste for seasoning. Add salt and pepper if needed. (The sugar tames the acidity of the tomatoes)
Serve and enjoy!

    Richard , great recipe pal, I am Irish & my wife is German/Austrian so we are big eaters of cabbage or sauerkraut, the only thing I may add to this is diced taters in quarters, some good corn bread on the side. btw , I use 80/20 ground chuck in nearly everything , but we are getting some weird ratio's of ground chuck/beef 1:50 ?, here like 77/23 or 73/27 , etc... are you seeing that in grocers in Texas ? Just curious

    ​@RICHARDINTHEKITCHEN yep , I agree, you lose a lot of meat, & 90/10 ground round has no flavor, not enough fat, I don't buy them, 80/20 works in everything
