Easy 3 meat Instant Pot Texas chili recipe. This delicious chili is made with bacon, ground beef and breakfast sausage flavored with simple seasonings and assorted peppers. This homemade chili can be enjoyed in less than an hour or even slow cooked for several hours with the slow cook function of the Instant Pot. This is an excellent chili recipe with just the right amount of bite.
Shopping List:
1/2 lb. bacon
1/2 lb. 80/20 ground chuck
1/2 lb. Jimmy Dean Original breakfast sausage
3 tbsp. olive oil (divided)
1/2 small can chipotle adobe
8 oz. tomato sauce
8 oz. tomato paste
1 small can Rotel mild or hot
1 medium sweet Vadalia onion, diced
1 finely chopped jalapeno pepper with seeds and membranes left in
1 tbsp. minced garlic
2-3 tbsp. chili powder
1 tsp. course black pepper
1 tbsp. Morton's course kosher salt
1 tbsp. cumin
16 oz. beef broth
4 tbsp. Better Than Bouillon chili base
IMPORTANT TO KNOW! THE IP DOES NOT GET AS HOT AS A CONVENTIONAL SLOW COOKER. ONCE YOU PRESS THE SLOW COOK BUTTON AND YOU SET YOUR TIME, THE POT READOUT WILL APPEAR AS BEING STUCK ON PREHEAT. DON'T WORRY! IT'S NOT BROKE. THE FOOD REMAINS WELL ABOVE THE SAFE ZONE OF 140F. IT MAY TAKE SEVERAL HOURS FOR THE DISPLAY READOUT TO SWITCH TO THE "COOKING" MODE. THIS IS COMMON WHEN USING THE IP AS A SLOW COOKER. ANOTHER CONSIDERATION IS TO USE A TEMPERED GLASS LID WITH A VENT HOLE INSTEAD OF THE IP LID. IF YOU DO USE THE IP LID JUST MAKE SURE THE VALVE/SWITCH IS SET TO THE VENT POSITION.
Directions:
Press the saute button on the Instant Pot and select high heat. Press the start button and wait until the pot display reads hot.
When the pot is hot, add 1/2 of the oil and the bacon and cook until crisp. Remove and set aside.
Add the remaining oil, ground beef and sausage with a good pinch of salt to taste and cook until thoroughly browned. When almost browned, add the onions and cook 5-7 more minutes until softened. During the last minute, add the garlic and jalapeno pepper.
Add the bacon back to the pot. Stir.
Add the can of chipotle in adobo sauce in a small food processor and blend to a paste.
Add the tomato sauce, tomato paste, chipotle in adobo, Rotel, chili powder, cumin and black pepper. Stir well.
Add the beef broth. Stir.
Press the cancel button to end the saute function.
Replace the lid and set the Valve switch to the "VENT" position. IMPORTANT: FOR SLOW COOKING, MAKE SURE THE VALVE IS SET TO THE VENT POSITION.
Press the slow cook button and select high heat. The time defaults to 4 hours. If you want more time, simply press the slow cook button again until you reach your desired time. NOTE: DON'T BE TEMPTED TO SELECT THE SLOW OR MEDIUM HEAT SINCE YOU'RE SLOW COOKING. THOSE SETTINGS ARE NOT EQUIVALENT TO THOSE OF AN ACTUAL SLOW COOKER.
When cook time is up, press the cancel button and remove the lid.
Add the Better Than Bouillon chili base and stir.
Taste and adjust seasoning, if necessary.
Serve and enjoy.

    I didn't know Better than Bouillion has a chili base! Gonna look for that. Better than Bouillion is my secret ingredient for so many dishes! People don't even know, lol!

    I had never used the chili base before. Since it goes into the chili at the last, I tasted the chili before then after. what a game changer for better chili. Thanks for watching. I got it off of Amazon.

    Richard, enjoyed watching you make your version of Texas chili. I don't have an IP, but you certainly could do it on the stove top. The killer was the 4 hour cooking time! What, really? Sounds delish though. Tks. Karla in Cali.

    Thanks so much. The longer you slow cook chili the better it is. It gives all those ingredients to marry together. I've done it in the slow cooker for 8 hours before. But you could do it in the Instant Pot on pressure cook for 5 minutes if you're in a pinch for time.
