I just made these, and boy are they delicious! I was looking for a way to use up zucchini and opted for these rather than zucchini bread --and I am so glad I did!!

I do NOT love cilantro! I hate the taste of cilantro! It tastes like I'm eating a mouthful of soap. So, no, you are very wrong about everyone loving cilantro! And, how come you did not wash the cilantro before cutting it up and adding it to the salad? I will try parsley instead of cilantro and see how that tastes.

So use 32 ounce spaghetti jar.... 4 cups water cooks down
This brings me back to my childhood. On hot summer nights my grandmother used to make polenta & added corn kernels to it. She put it in the refrigerator to set, & then (sorry!) fried it & poured maple syrup over it when ready to serve with fresh tomatoes from the garden. You could adapt her recipe to the oven.

Do not like cilantro
I planted Jerusalem artichoke in a raised bed It is a tuber that comes back each year and spreads (hence the raised bed). It is suppose to taste like the water chestnuts but when cooked can take on the consistency of potatoes. JA are a good source of folate, dietary fiber, and vitamins C and K. It’s a win-win plant.
