And...is there any secret to getting them out of the tins? - they look robust as its h.w.pastry but I don't want any 'surprises' lol.

Not sure who told you this is a "completely different recepie" than American biscuits, but I've grown up with them as well as make them all the time, and the only real difference is the mustard. We often use garlic instead of mustard, but they are the same. To be sure I followed your recepie and made these. A slightly different texture as we fold our dough several times to get a lighter/flakier texture.

Hi John! I love your recipes and you make the most delicious pies. Quiche is always a firm favourite for us in this house! I was wondering if you have made any scotch pies at all. I have always been afraid of making them and pork pies, (but I think I may muster the courage to make pork pies) however my favourite pie of all time (other than a mere recent fave being the Kiwi/oz classic - a cheddar beef pie yummy)has to be the classic humble scotch pie. I was put off them some time ago when someone told me (“on good authority”) that they were made from offal. I have recently learned that they were actually made, traditionally, from mutton. So much time wasted on misinformation. So, if you have made them please share a link for me. If not….PLEASEPLEASEPLEASE 🙏🏻🙏🏻🙏🏻

@JohnKirkwoodProFoodHomemadeКүн бұрын
Hi J, sorry you're having problems. Sounds like your measurements are wrong somehow. If you are converting to cup and jug measurements, that will be the problem. The ONLY way to be sure is to weigh all of the ingredients in grams, especially the water. Also imperial measurements can be so confusing too, Uk ounce, USA ounces, fluid ounce, all different. Remember Jesset, my gram is exactly the same as your gram, wherever you are in the world. Check out my Vietnamese baguette video for a more visible explanation of what I've just told you. Keep your chin up. My measurements are correct, It will all fall into place for you eventually 😉.
