    You won’t get good bread on the West Coast or even the Midwest. The best bread will be New York or Rhode Island. It has to do with the water.

    This looks (and sounds) amazing. It's funny, I used to shun the heels of bread loaves as a kid, but now that end piece with some butter is my favorite part, especially when it's still warm.

    Tip: i never can get a good steam in my oven. Just doesnt seem to get going for whatever reason. Solution: I used a muffin pan and filled the cups with water. More surface area heating the water and the oven was crazy steamy, bread came out great!

    Mr. Kirkwood, this bread is amazing. It has become our sandwich loaf. First time I made it I could not believe the actual size. I envisioned it blowing the door off my oven. Super great bread. I also have perfected your rye bread using pickle juice, my go to loaf. One every 10 days I make. Just got your book as well and am throwing out my "Not JK" bread recipes.     Very similar to my favorite homemade pizza crust recipe. I suspect, if you replaced the butter with olive oil, pressed it flat, topped sparingly with crushed plum tomatoes, low moisture mozzarella, and fresh basil leaves, you'd have a pretty good pizza.

    Greetings John You are always my only port of call for traditional English baking. Why is a Bloomer called a bloomer? Because the old English bakers term for oven spring was bloom. BTW - just in passing Instant yeast can be added direct to the dough. Unlike the old active yeast it doesn't need starting with sugar and warm water. Here's something. I add 3% butter to my French doughs it does not have too much of an effect on the crumb and it keeps them fresh for days. Your dough here is almost exactly what I would use for a French bread. Except for French dough I use more water. If I may - 15 minutes cooling is way to short. The trapped steam is still gelatinising the starch. 30 minutes for a loaf that size is an absolute minimum. An hour would be better. You can see the doughiness when you slice, because it is too soon 10:09. I hope you don't mind an old hand saying that. This video is so well made, and the method and content are a joy to watch. Thank you. Wishing you the best.

    I make this bread lol and also Cob - quick and so easy and tastes great too. The only difference I add a little oil to the mix instead of butter. I don't have a machine so I go old school lol. Very therapeutic.

    John, i have very recently discovered your channel and i have run the gamut of emotions...lol. I absolutely love your bread videos. As a child of the 1970's, I have such deep memories of my mamaw (Appalachian for Grandma) baking bread. She was famous in her little country community for it. She would be up before the sun to get started on the dozens of loaves and pans of buns she'd bake. By breakfast time, we'd awaken to the smell of fresh bread, eggs, bacon, and coffee, and the sounds of the first neighbors knocking so they could beg a loaf.😊 Mamaw tried to teach me her bread recipe, but being the type of cook she was, at that age I had no concept of "a healthy pinch of salt" or "yer gonna feel the dough come together. " Thank you for offering me a way to make my heavenly mamaw proud. ❤

    Been struggling with bread until I came across your recipes. You make it so easy to follow and I ove the way you explain the reasonings behind certain things during the process.     Just done this, excellent. I live in rural North East Thailand so getting equipment and ingredients can be challenging. However, when a bald British man goes into a store in Thailand and asks for a shower cap they gave me funny looks 😊

    Hello John, another 5 star recipe along with all your others ! If I could be of some help, I’ve found an ingredient that will definitely improve your specific baking experience. I too have the issue of past hand injuries coming back to haunt me while kneading the dough. I have found that if you add 3-4 ounces of good Canadian rye whiskey to the recipe there will be a noticeable improvement. While waiting for the second rise, simply pour the rye over ice and sip till consumed. This will minimize any pain you may be having in your hands as well as making the wait time less anxious. HOWEVER this is not a medically proven fact or suggestion, but it couldn’t hurt 😊.

    oh John , you are such blessings. My italian neighbors used to make bread 365/365 , it is so good. One time asked her for recipe. She took a hand, took a flour, fat, salt and mixed. Never seen her weighting the thing. Always perfect always same. Thanks for sharing have a blessed day!

    I just bought fresh yeast. I think its fate, definitely will have to try this. Camera steam was no issue, definitely gave an excellent example. Almost a bread sauna. Lol. Betcha it plays a roll in enhancing the aroma. 🥖❤🇨🇦

    My grandma use to buy this bread alot I loved it as a kid the more flour on top the better. Weekends sleep overs at hers always ended up with that bread homemade butter and jam with a glass of milk. Yummy I'm making this tomorrow now can't wait.

    Hey John, I baked 2 loaves of this recipe, and they came out just as yours did. Thank you for the upload. I make your bloomer recipe every week as my wife now refuses to eat shop bought bread. Also, I made your butter too, and that tastes amazing. I am a retired chef who lost the passion for cooking, but in recent years, I have found a new love for baking. Mostly down to your easy to duplicate tutorials. Great work 👍
