I tend to pull my steaks off as soon as I get 124f on the thermometer and they always end up a rosy medium rare after resting.
I think that's the most delicious looking steak I've ever seen. The broccoli dish looks delicious also

Medium rare is 52°C-54°C in my experience, 65°C would be more like medium well! Looks fab though, very much making me want a steak

Now I'm hungry. Thanks for showing. "Arrosing" is a technique that I also like to use. As herbs, I like to use thyme or sage from the garden. As a pan, I like to use a heavy cast iron skillet with a heavy lid that presses directly onto the meat for steaks. The enamel coating helps to prevent sticking. 👍👍

Yum! I think that “tender stem broccoli” is called “broccolini”. Some people call it baby broccoli. It’s a hybrid of chinese broccoli (gai lan) and regular broccoli. One of my favorite veggies!

as always a great video! personally I've experimented with steaks for about three years now and would have done the searing of the steak in extra virgin avocado oil (as it creates the least smoke and spitting at high temperatures) at a higher heat, flipping once per minute, then doing the butter basting with rosemary and garlic at a lower temperature, as butter can burn at higher temps.
Every year, usually for Father's Day here in the States or for my birthday (which is Christmas Day so we usually do it a day or two before or after) my wife will cook me a steak dinner. This video and recipe looks so incredibly good, I know what i'm going to ask for when the next occasion comes. Superb recipe, and it does indeed look mouth watering 👍👍👍 THANK YOU for sharing this.

Me again John. Steaks are SO expensive that you have to cook them as well as possible. For quite a while I followed Heston's 30-second-flip method, even got a mate hooked on it. But honestly it's one heck of a faff. More recently, as my confidence grew I started experimenting. Four things I find work for me (pretty much what you've just videod, so feeling quite chuffed): 1) Get the steak up to room temperature before cooking (at least an hour and completely out of any packaging). 2) Season with salt and pepper right at the start of that process so the flavours get into the meat and the salt draws out the excess water (often injected to bulk it up). -Both of those were from Gordon Ramsey. 3) Totally agree with hot and heavy pan (Hairy Biker's cast iron non-stick frying pan; less than £20 at Lidl-in-the-middle). My induction hob is having an affair with this pan! 4) Leave it alone! Whack it in the pan and let it brown properly before turning (if you keep moving it you'll spoil it). Like the butter baste at the end - a good time to add crushed garlic if you're into that. Any earlier and it'll burn. But you've really opened the door by showing us how to do a peppercorn sauce. Roll on Steak Thursday!!! Thanks John.

Hi John! This looks lovely. I will probably try this because it does not require any pastry experience and I am sure I can do this one. I would love to try some of your pie recipes, but my kitchen is not suited to the working of the dough (you should see it). My only worry is where in the world I could find such a type of broccoli near me? I wonder if there is a Gourmet grocer that might carry such a thing?
Here in the U.S., those temps are more in the medium to medium-well range. Medium rare for us is around 135F. Looks great and the same way I learned to make them. We just take them off closer to 2 1/2 minutes on each side so they are pinker inside. Butter and rosemary basting is a must!!

Basting the steak with butter during the cook rather than applying it during resting doesn't really do anything for the steak. It does brown the butter however, which, at least when it comes to steak, I'm not the biggest fan of. Try brushing the steak with liquified non-browned butter while it's resting after the cook and see which you like better.

I wonder if we can turn the left over greese from the meat to make it a creamy sauce with sour cream ? dam its loookkkkk so delicious. Hence I love the beef cattle breeds from Britain, Dexter, Angus, Hereford and other breeds.

I love John's meat pie vids. This time, he stepped into a realm I know a thing or two about. TBH, steak basting is a bit of a pet peeve of mine. It does nothing except brown the butter, and to me, brown butter is better for desserts. I prefer to brush the steak with liquified Kerry gold as it rests. A couple other things that are purely my preference are that I dry brine the steak in salt at least and hour prior to the cook. As it's only an inch thick in this vid, perhaps such salt penetration is less important. I also really enjoy the flavors imparted by searing the steak on a charcoal grill. I like to get the steak up to internal temp in the oven or via sous vide and then sear it on the grill. The next steak based experiment I've been considering is to wet age the steak in mushroom ketchup. Pure insanity?

That steak is way leaner than I'd expect for a rib-eye
Hello John, are the "doneness" temperatures different in the UK? Perhaps since madcow? In the US 150-158 F would be medium/medium-well. Just curious if you happen to know offhand, shes a good lookin' meal either way. I love that you stuck with just salt and pepper so the meat can stand on its own (and patronizing your local butcher). For us Yanks, medium rare is no higher than 125F so that equals 120F with the last 5 on carryover. Is the cooking temp preference that different in the UK? The side looks wonderful. Is tenderstem broccoli different than regular broccoli?
