Love that a world famous chef does simple home made burgers. No wanky brioche bun, no special sauce, burger isn't made up of 50 ingredients and he uses a simple toaster like a normal person.

"This is purely a question of taste." - Jacques Pépin Jacques Pépin is not your traditional chef although he is a old. He insists to use personal preference on foods rather than the food should be on a traditional type of taste. This is what a chef should be. You should trust your personal taste when cooking. Cooking is like visual art and literature. It is more a generalized thing rather than to acquire specific audience.

However, as much as I adore him as well, I don't think that particlar aspect ( cooking ground meat to well done) is a matter of taste, I do belive it's a food pathegen safety issue. You can look into it, it has to do with the meat surface being ground up, as opposed to say a steak where it's on the outside

This is a delicious way to make a burger. The first time I had this was when I was a kid, at a resort in Montauk Point Long Island. Probably early '70's. Been making burgers on English muffins ever since. BTW... Good rye bread works good too.

Yes! Hamburger on rye with Swiss cheese, ketchup and pickles is called a patty melt at Denny’s, but they are better at home. There are so many ways to make a great burger. I like to butter and grill both sides of the rye bread to keep it from falling apart.

Greetings from Slovenia. A famous ground beef recipe from Bosnia is "Cevapcici" which are traditionally a type of small kebab. However the recipe (you can Google it) also allows you to make excellent burgers. We can buy both types in the supermarkets here but it's nice to make your own. 👍
