This is fun thank you I broke one yolk on the transfer other was just fine. I will let you know this recipe help me to get out of yard work as I told my wife timing is crucial I can slow down the eating but I desperately need another recipe start right away so I don't have to go back to the yard work

berrybuena Really? I have separated many hundreds of eggs with my hands...never have I broken a yolk, unless it happens to break coming out of the shell. What are you having trouble with?

This is truly an all time video. Learned about what causes my separation anxiety AND got a lesson on meteorology. Chef John you’ve truly outdone yourself.

Sometimes I wonder if KZread chefs just have like a drawer for each utensil. Like a drawer with 13 different whisks or 7 different peelers. I hear some rather weird instructions in some recipes that leave me wondering, like i was looking up some recipe and of course the highest rated version was some god aweful food blog that starts off with 8 pages of the cooks life history, and when I finally got to the actual recipe it had odd insutrctions like "using your _bamboo_ cutting board and a Sentaku chefs knife" as if I have a handful of different cutting boards and a dozen different chefs knives.

@@arthas640 couple of things: chef John is an actual chef so I'd hope he'd have a good number of kitchen tools. The size of things is a running joke on this channel: see freakishly small wooden spoon
All these years later, and Chef John is still the MVP of KZread cooking.
Anyone else just find Chef John's voice comforting and reassuring? Amid the Covid-19 pandemic we've literally lost our business and home. Somehow, Chef John just made me feel that eggs will make it all better. Thank you Chef.

Made this for breakfast. My wife said Wow! She also said it would be good with Canadian bacon, so I played the part of the video where Chef John says it would be good with Canadian bacon.
Totally gotta try these. I’ll try one when Mom’s still sleeping on Mother’s Day so if I screw it up I can make her waffles instead.

Love this! My grandmother used to make these when I was a kid, which was like 50 plus years ago. Except we would put the uncooked whipped egg white right on the toast, around the edges, and then drop the yolk in the middle and put the whole thing in the oven. We called it a birds nest and it was kind of a family tradition. That and something we called a marguerite, which was a marshmallow on a saltine cracker, topped with jam, and baked in the oven till the marshmallow was kinda melty and toasty.
You should have some zagged, crisp bacon coming out of the cloud as lightning.
I'm going to make these for breakfast. Now that I have plenty of time on my hands I intend to prepare every recipe Chef John has ever created. :-)
literally watched this video, got up and went to the kitchen and made 2 of these. I also added a wee bit too much salt but it was still good. I definitely would caution against using a smaller bowl. You're definitely going to have to put some whip action into your whisking, but you can slowly reach exactly what chef john shows here. will make again for sure
The first time I saw cloud eggs I thought the egg was sitting in a mound of mashed potatoes. So that's how I made them. So good. Guess I should have googled the recipe. Not so smart am I? They were still good : )

So i lost my will to live this morning when I broke 3 yolks and couldnt stiffen the eggwhite...almost cried. Thanks, John. Dont be embarrased to use a machine to whip, cause thats what I used in the end and it worked. Anyway, shows the mastery level of Chef John making it look so easy :P (To be fair eggs are kind of my nemesis.)
That plate cleaning was so satisfying
We all know were not going to do this, but watching the video makes us all think how great it would be

I haven't either, although I do remember eggs steamed with the milk steamer of an espresso machine back when that was okay to do. Those are good too.
I was nervous at the end thinking, "Chef John left all that egg." Silly me. I had nothing to fear. CJ knows how to run his plate.

We called these "fluffy eggs" when we made them for a Scout camp breakfast for three dozen people over twenty years ago. I'm sure that it wasn't a new recipe then either. Keep the yolks in the half eggshell back in the box. Great fun John.
