Japanese Souffle Pancakes
2 large eggs
30 ml (2 tbsp) milk
24 g (3 tbsp) flour
1 g (1/4 tsp) baking powder
1/2 tsp vanilla extract (optional)
1/2 tsp lemon juice
26 g (2 tbsp) sugar

There are 3 possible reasons why your pancakes are not fluffy or shrink. - Your meringue was not whipped enough. - You mixed the egg yolk mixture and meringue too much, so your meringue bubbles were broken and you lost some of the fluffiness. - Baking temperature was too high, or you cooked the pancakes too long and they were over-baked. I've also practiced many times. It's a bit difficult to bake a perfect one, but I hope you enjoy baking!:)

I turn the bowl with the meringue upside down it was finished but when i added meringue it just got loser

Made it today! I was absolutely wonderful!! You can also substitute out lemon juice with a scant ¼ teaspoon of baking powder! One final note: the pancakes will rise better and be fluffier if you use cake flour instead of bread/A.P. flour!

I've just done this! it wasn't as big as yours, but the texture was definitely fluffy, it felt like eating a cloud, it was absolutely delicious. a great breakfast to start the day 😌

@@INDYASSA I don’t have an electric cooker, would a cast iron pan be good for cooking the pancakes on? I believe they keep a constant temperature.

I tried this out today and they came out literally AMAZING. I have been looking for soufflé pancake recipes for a while now and couldn’t seem to find any that worked because my pancakes would always be deflated. This is the first time that my pancakes have actually rised and they taste awesome too. This is definitely going to be my go to recipe for soufflés.

I made these this morning and they were delicious. This is the most helpful video out of the couple I watched. It took me a minute to get the hang of it but once I did wonderful. I don’t think I’m gonna go back to regular pancakes again.

3rd result for me when i look up pancakes!
i followed your recipe and process, it was a success! my first time doing this with my mom's mixer. the first time i did was using my hand only whisking the egg white but failed it to become stiff. my child is very happy with what i have made bec its been years since she requested me to make one.thanks so much!
Best recipe on YT for Japanese pancakes. Thank you! As for toppings, of blue berries, strawberries and maple syrup. I will also try some lightly toasted pecans and dash of cinnamon on top.

Fantastic video! I've been making my own variation of these for a few years, but I'm going to try your version tomorrow. I do like butter and really dislike vegetable oil from a health standpoint, so I may try fortified butter / ghee. I'm also curious to try these with a bit of ricotta cheese, but I'm definitely going to try your recipe first as these look truly delicious! Arigatōgozaimashita.

How about use avocado oil on the griddle, then just before you pour the pancake mix, dab the area with a stick of butter? As long as you have a visible amount of avocado oil where you dab with butter, it should keep the butter from burning.

Excellent recipe. Having the zojirushi cooker helps a lot..they turned out really well. It takes a lot of practice though to make them look as nice as yours. Flipping wasn't easy for me!
Made these a few days ago and they came out like dorayaki but they tasted so good! I will keep trying to get them like in the video and hope everyone else succeeds as well!

This is my 5th try (first time I've used this recipe) it didn't turn out as fluffy as my other attempts but it was delicious! Practice makes perfect, my first attempt looked so bad lol

We were a very large family and did not alway have syrup so Daddy sifted confectioners sugar on them and used fresh lemon juice !!!!!! Still a favorite today !!!! 😊❤️😊❤️😊

I tried your recipe for first time and I did as you said exactly but I added more 1tbsb of milk and half tbsp of flour and I added a drop of vinegar on milk💗 It turned out amazing like a cloud but on a plate I loved it so much❤ But it wasn't tall as your as well... you made my day ❤ I don't know how to thank you❤ You deserve more subscribers and likes💗

I found this was the best Japanese souffle pancake tutorial to be honest! I'm missing the ingredients that help stabilise them, so mine never look tall, but oh my god, I'm glad i tried them, it feels like I'm eating a cloud xD

Took me 4 tries but I finally got them right! For me the struggle was getting the temperature and timing just right. I made them on the stove top on setting number 6. 3.5 minutes one side then flip for 3 minutes. Perfection!

Great Recipe Although mine wasn't as tall as yours, it was super fluffy and tasty. The only flaw i could see in mine is the fact maybe i didnt whip the merigue enough despite it not falling when flipping the bowl, and my pan being sticky.

This was so much fun, and they tasted great! Mine weren't as tall as yours but I also did not pipe them high enough I think. Everyone who ate them was amazed and really enjoyed them. It's fun to poke them because they really do jiggle. Hehe. I saved the recipe in my recipe box but I actually put it under dessert because it reminds me of a really good flan!

Thank you, I made it and it was very good. 😊 I like to make it again. I made the syrup in a persian way though. Boiling some sugar with some water and when it became like a syrup I added one spoon of rosewater and one drop of cardamom extract, in Iran we usually add some saffron powder too. Instead of cardamom extract, some cardamom powder can be used too. It tastes so good as if it came from heaven. It went so well with these beautiful pancakes.
Didn't rise as much as yours, but still super delicious - I was never a huge pancake fan, these changed my mind.

Step 1: be positive and feel happy to cook Step 2 : prepare everything before cooking Step 3 : dont heat the flame of the gas too much, incase you don't have electric gas Step 4 : don't overcook the pancake so then you can have more fluffy ness Step 5 : thnx me later if you find my comment useful 💕 Have a nice life✌️😃😄
