Besides sharing my skills through online courses and creating new recipes, I have been hired to do consulting. As a consultant, I got the chance to participate in the creation of 2 successful Japanese Cafes, one in Dubai and another in New Delhi.

long ago, my mom used to make some similar food "schaum-ei" (foam egg), only from egg and sugar (and a tip of salt maybe)..

hello sheff, I want to ask. I've finished the egg yolk mixture and started stirring the egg white mixture, but strangely when the egg white is stirred it doesn't have a stiff texture, what's the problem?😢
i followed your recipe and process, it was a success! my first time doing this with my mom's mixer. the first time i did was using my hand only whisking the egg white but failed it to become stiff. my child is very happy with what i have made bec its been years since she requested me to make one.thanks so much!

Just tried to make these. They look amazing in the pan with the lid on and then when you take it off....... You can see them shrinking! I half expected them to make that deflating balloon sound. Anyhow, this is a skill not a science. I dont think I have the time to learn it. Which is a shame cos they look sooooooo good
