Like I said: "Cloud Eggs - I will never make eggs any other way. I certainly mean that. It all started when I woke up one morning and wanted something different for breakfast. So, I decided to try this eggs recipe. The outcome was pure heaven. The yolks were done to perfection and the whites were whipped up cloudy and billowy. You simply couldn't ask for a more delicious breakfast, especially something make in 20 minutes. Have a couple of these wonderful cloud eggs with some coffee and toast and the day will belong to you.

    Especially good using fresh turkey eggs. Folks don’t think about eating turkey eggs because they are rarely sold as a consumer product, but around 1900, they were considered a delicacy… on the menu of such places as Delmonico’s. We raise heritage (Narragansett) turkeys and many of the extra eggs end up on our plate or in baked goods. If you ever get the chance to try a turkey egg… give it a try.

    Reminds me of my childhood when my mom did this in a pan, the eggs were not as fluffy but they used to bubble up instead. Of course the eggs used to be both fresh and organic and the aroma of those fried eggs is something we don’t get anymore.

    Salmonella is on the outside of the shell, so better to separate yolk with your fingers. I make mayo with raw farm eggs.

    I have plans for this recipe when I next have breakfast with my sister; when she was very young (we have an 8 year age difference) I would entertain her when I cooked by using food colouring in different foods. I see this recipe has the potential for green eggs with ham, purple hash browns, orange juice and blue milk.

    I make mine without all the additions. But I do heat up a small pot of whipping cream and grate some parmesan cheese in the creme, then pour it into the bottom of the dish before topping with the whipped egg whites. sprinkle a little parm in the egg whites while beating. Delish.

    Yes you can. Just cook the white a little less before putting your yolk in them.

    Well, I messed up somewhere. I couldn’t get the egg whites to stiffen. I decided 20 minutes was too long so I put them in a bowl to cook later for the dogs. Cleaned and dried everything, did it again. They got stiff but didn’t stay that way. I added crumbled bacon after patting out the excess grease, and sautéed green peppers. I took them out after 4 minutes and they had collapsed and were running all over. Put the yolk on top and it broke. 🤦🏻‍♀️ But they tasted great! I don’t know if the peppers wrecked it, but next time I’m going to use a muffin pan and see if they keep their shape better and I’ll leave the peppers out. You make it look too easy, Dave.

    Hi Deborah. Oh no. I know it can be tricky. I'm always super careful when making meringue. I always wash my hands to make sure there is no oil. I clean the bowl with lemon oil or vinegar, and make double sure there are no yolks in with the whites. An electric mixer is kind of a must and it takes a few minutes. I have done it with a whisk, but it's labour intensive. Believe me, it's a technique well worth perfecting though. Hope this helps.

    @@TheCooknShare Bingo! Some of the yolk dropped into the egg whites. I didn’t think it was a big deal, but apparently it is! I keep forgetting how much cooking and baking are all about chemistry. I knew you’d help me figure it out! I don’t usually have a problem separating eggs but I admit I don’t do it that often. I don’t do well with anything remotely like baking and meringue goes on a lot of pies! I can use 5# of flour trying to make one pie crust! I do much better with your dinners☺️. Chicken and dumplings tonight!

    Dave my friend, never seen this technique before, it will be for me alone though, my wife & the 2 girls will only eat scrambled, I've tried over easy, medium, etc...no go, I like mine with runny yolks, keep your stick on the ice pal, btw , not everybody likes everything, oh well
