    I tried boiling my ribs for the first time this weekend. My sister has false teeth so she suggested it. I boiled them whole for about 45 minutes in seasoned water. Vinegar, garlic, pepper, etc. Then i smoked them and still got a smoke ring. Kids and adults said they were awesome. 2 people said they were the best they ever had. I didn't know how to feel about that... Lol But it's great for people who aren't into the competition style texture.

    I have been making Whole ~5lb Chickens because it's so much cheaper to do that ... and I use this Tony's injector and marinade and it works great! If you want a more traditional seasoning on the outside, you can use stuff like Bell's or even Lemon Pepper or Mrs. Dash etc. - but if you really want to make it 'seasoned' - you can go with Tony's Creole Seasoning ... just be careful, it's very salty so you have to be careful.

    Quick turn-off: "fall-off-the-bone". Immediate disqualifier in any competition in Texas. Proper rib texture involves a slight bite into the meat. This is not stew meat!

    Sweet Baby Ray's or Cattlemen are the best barbecue sauce you can put on these ribs the Hilton used to use Cattleman's barbecue sauce

    The way they do it at the Hilton Hotels the parboil it buy chopping up onions celery carrots garlic and they put seasoning in there and water and parboil it till it meets 3/4 inch up the bone then they take it out and then they season it and put it on the grill for a little while with barbecue sauce and bake it the barbecue sauce on to the ribs that's how it is done

    Ham hocks are fine for the stock. Ham shanks are better if you want more meat. I use both 😊

    NOT - this is a disaster from cooking to cutting - don't do this. Sorry brother. You sear first to lock in juices so it won't dry out. Also, you al\ways cut against the grain, as the shortened fibers will make for a more tender bite. Much more, but there's the basics

    I hear you can drill holes in the bottom pan and shake them with tongs to get the ashes out. Of course, putting some aluminum foil on the bottom is best.

    Go onns have mine soaking overnight, changing the water every 4 hours starting this afternoon. Then on to my Masterbuilt at 250 F. Following your recipe for the rub and steaming . Hoping it turns out as good as yours looks

    Never seen the carrots used. And tomatoes are not that common either. Almost every recipe uses tomatillos. I have a favorite restaurant that has bomb verde and they tell me theres no tomatillos in it. I have tried some tomatoes instead but flavor was off. Maybe its the carrots thats there secret. It definitely has a orange color shade not the normal green. Thanks for the video and ideas. ❤
