Pierogi Joe- Polish & Eastern European Cooking

Polish and Eastern European cooking. Recipes are from my life, and refined by living in Poland. Recipes feature authentic recipes and ingredients. I try to teach you a bit of the culture and explain why the recipes look a little different than the Americanized versions. My basic mottos on Polish cooking: "If Grandma didn't need it or want it...I don't need it or want it. "Simplicity IS complexity". All this from the guy that was named "Best Polish restaurant" in Northern Ohio and other awards, and earned various media and TV series appearances. I look forward to showing you how to get back to basics in authentic Polish cooking and provide some fun entertainment.

    Just feedback here...if you're using a hat-mounted GoPro...please keep in mind how dizzy some can get. In my opinion...I don't like it.

    Is there a dough that you’d suggest for someone with coeliac disease can use? Most gluten free doughs are horrible!! Thank you!

    Only thing is id be worried about the aluminum pot. Also, my family would always add 1/4 tsp white vinegar to the bowl. Also, i add dill

    Personally I loaded up with dill too. My favorite herb. I agree that the aluminum might be suspect. You put a teaspoon of vinegar in every portion bowl?

    Nice try, but that's a pasta dough, not pierogi dough. Pierogi dough DOES NOT use eggs.

    Quite frankly I don't really care for your passive aggressiveness and you're a fool. I learned in Poland while living there for a number of years. That and about three other varieties of those to use for pierogi. Check yourself

    I make a big batch every 3months and freeze them all my grandkids and and daughter love them with hot butter and sour cream i put bacon and onion cheese in the potatoes

    i do 3 2 1 method, bread flour.. 3 cups of flour, 2 eggs one cup of sour cream, most soft flexible dough ever,

    I’ve had a variety of tasting dough. Some are very thick and chewy while others are just delicious, light and thin. Yes, cake flour is a fine delicate dough.

    Kraut juice in the glass? Some people drink it, it's like medicine. I don't know what it's medicine FOR! That's a lot of mushroom liquid, I try to keep that and cook with it, I think it doesn't take much water to do that reconstituting job, the dried mushrooms might not need to even be covered if they are in a jar or something that's sealed, you can shake them if you want.

    Two creamy. But if it's something you want to try I'd be curious to know how it went. Maybe add some bread crumbs to the blue cheese to make it more dense and not meltable
