In my family we made the cheese filling with onion egg salt and pepper. On the farm during the depression and prohibition the potatoes were used for making vodka. The cheese was made from the milk of the cows. To this day as my mother before me I make the farmers cheese pierogi and to please the younger folks in the family I make potatoe and cheese as well. I love these old traditions. My kids only want to eat them not cook them.

Farmer’s cheese is so easy to make at home. Highly recommend over store bought.

See so many adulterated versions of items labeled pierogis in the store. Cheddar cheese! Ricotta or cottage cheese, just cheap unsavory substitutes. Yet purchased some fine raviolis which I was able to cook as pierogis and were great with my sour cream.

Yeah I don't like how Polish food gets bastardized an adulterated. Cheddar cheese is from Wisconsin not Warsaw.

Yeah, I don't like seeing Polish food bastardized or adulterated also. Cheddar cheese comes from Wisconsin, not Warsaw. ;) Even though I posted the cheddar cheese pierogi I also posted the other traditional types of fillings in other videos.

Babcia used to mix 50/50 Idaho potato and farmers cheese. Sometimes pot cheese comes to mind. I confuse pot cheese and farmers cheese?

I’m in a super small town and can’t find this cheese anywhere, what could I use as a substitute? I’m craving some good polish perogies like my grandma use to make but I can’t wait until I find these cheese .

There are recipes for how to make farmer's cheese at home. There's a variety of them online. It will be the topic of one of my next videos cuz I would like to do it and show people. But if you can do it and report back and show me the recipe I would be glad to give you credit when I do the taping

Mexican queso, the one that crumbles ...it's crumbly and w a slight salt flavor and maybe a spoon of yogurt for the tanginess

Two creamy. But if it's something you want to try I'd be curious to know how it went. Maybe add some bread crumbs to the blue cheese to make it more dense and not meltable
