    I laughed when he said that too. I buy frozen perogis at the grocery (Mrs. T's brand) and when I make them for myself I'm usually eating around a dozen at least. Tossed in some melted butter and sprinkled with garlic salt and I'm good to go :D

    Seriously! When I make them, I usually make 50 (family of 4 and figuring in some good cold leftovers), but it's a lot of work, so sometimes I cheat and buy Mrs. T's, too. Walmart has the big bags of 24. Perfect! But, I'm going to try this recipe. Looks like a great alternative to all that dough making.

    +R. McBride, et al - Taking a more objective look at this recipe, I don't think that "cheater" is a legitimate description. Especially to those willing to enjoy Mrs. T's or any other prepared pierogi. Even more precisely, there may be customary pierogi dough recipes, but there is no "official" dough recipe and, like anything else, there is a great deal of variation regionally and even family to family. So I say that a wonton wrapper is as legitimate as any other dough cover. Who knows, maybe it represents the perfection that our (or at least, my) ancestors were pursuing. One babushka says to another: "Have you seen Mrs. Wontonski's pierogi noodles? They're so beautifully thin and pliable." ~ One could make the case that it is cheating not to make the pasta from scratch. That's only accurate if one is expected to make the cheese from scratch or grow the onions, potatoes and hogs in the backyard. Truth be told, probably the one thing that undermines the traditions of this recipe more than anything else - _is the cayenne!_

    Hey Gene, when was the last time you made homemade pierogi dough? I'd give you my recipe but then I'd have to kill you. What does help tremendously is a dough roller. Much faster. However the star of this show is the dough. Fillings can vary but if the dough isn't good... Oh and I am Polish and been making these for 30 odd yrs. so I know from whence I speak. :o)

    +Tonithenightowl - Dough roller, huh? Well, as you imply, confession is good for the soul. The last time I made my own pierogi dough was about forty years ago. Rolling it thin enough turned out to be not one of my favorite things. Maybe fifteen years later, I discovered wonton wrappers. About ten years after that, I was able to overcome my guilt for using them to make pierogi. I don't know if I can face that trauma for fillings spiced with cayenne.

    the wanton skins was a v good tip for a busy working mom like me. i adapted the recipe to include spinach n mince meat in the filling and served it w a creamy dill, chicken, bacon sauce. My son alone ate 10 pcs. Bless u Chef John ! Love u !

    Level-up pierogies by adding some slightly browned onion and lot of freshly ground black pepper to the filling. This recipe comes from Poland where they're called "Russian pierogies" whereas Russians call them "Polish pierogies" :).

    +telemasca it's actually Ruthenian Pierogi. Ruskie comes from Ruś, which is the Polish historical name of Ruthenia region (western parts of modern Belarus, Russia and Ukraine). Nothing to do with more modern name of Russia (Rosja in Polish, the adjective would be rosyjskie not ruskie).

    Chef John, thank you for making this traditional food from my country :) That's right, I'm Polish and I am delighted you have made them and this video :). Thank you :). My grandma does the filling without an egg but she adds a fried onion (golden brown fried). I actually make it the same way. And it is true - you can make them with absolutely everything :) Thank you :)

    Tip- add 1 finely chopped & fried onion to the stuffing. And freshly ground black pepper! So yummy!!!!

    Hi John! My lovely mother-out-law taught me to make perogies in a two day process. You can make the filling beforehand. Canadian Ukrainians make their perogies with cheddar, not ricotta or farmer's cheese. If you roll your filling into balls then freeze them, they are easier to work with when pinching into the dough. This means making the dough from scratch on the second day doesn't seem like such a big workload. Thanks for the fantastic videos! Shout out to Food Wishes!

    Chef John hats off to you for making this! Im Slovak (which is next to Poland) and we .make pirohy (slovak version) like once in a month. We make dough from scratch and we use Bryndza (sheep cheese) for filing. It tastes a lot like Fetta cheese but the texture is different. Anyways Im very pleased to see you making these.     Yay - I made the recipe as I had some egg roll wraps expiring in the fridge - used potatoes that steam in the bag in the microwave the cheat even more - these were great!!! Thanks Chef John!

    I am so excited to try this recipe! I have tried twice to make the traditional Pierogies and failed miserably both times, due to dough issues. I figured I was just gonna have to be limited to the frozen ones - this is a much better alternative. I love your videos!

    finally! something polish :) Although this filling type is called "russian" but still... it's a polish dish ;) In the original recipe, you should add fried onion inside the filling and add a lot of black pepper but yours is close enough. I would also recommend to try other traditional polish dishes:)

    They are dumpling/ mandu-pi/ gyoza wrappers not wonton wrappers. Wontons wrappers are the yellow square ones. Sorry had to say it.

    Actually, wontons wrapper are not supposed to be yellow. I never understand why they are yellow when you buy them outside China.

    Synthia Zeng the yellow is from egg and are strictly Canton dumplings 港式餛飩 to be used in soup with alkaline noodles 鹼水麵 or steamed dimsums 燒賣 or fried alone for congee 粥 sprinkles. The white ones are the northern style that's probably why you've not seen them.

    Super S Patrick is marketed so at least you kinda know what to do with it. Note it's in English. In Chinese I doubt it'd have the words 餛飩 on it.. more like水餃

    While I find the ready dough to be an abomination, at least you got the filling right :-) another variation would be to put the fried onion and bacon in and mix it all together with the filling.

    I made these tonight, Chef! But since I live in Argentina where wonton wrappers don't exist, I used pre-made empanada shells. I even folded them in the Argentine empanada style, thus creating a brand new East-meets-South Polish/Argentine delicacy. I also used panceta, since they don't have bacon here (I can just hear the collective gasp now... yes, they don't have bacon in the land of meat. They think its too "American" and they use panceta for everything instead). Anyway, they turned out marvelous. Wish I could post a picture!

    Fantastic and easily accessible recipe, thanks chef =) My husband and I used to have pierogis all the time when we lived in Michigan, but now, in Cali, we can only find the frozen ones... which don't cut it. He's coming home from deployment soon, so this'll be a great comfort food to make for him. TY again.

    Yes. In Poland they put a type of sour cream on top and then friend onions/bacon.

    Growing up in western Pennsylvania we had an eclectic population from all over Europe, Italy, Greece etc. My Scot Irish mom was a home-ec teacher before I was born and never heard of pierogies. A girlfriend of mine invited me for dinner and her mom made them from scratch. What a wonderful experience! I’ve never made them but this recipe is on my list.

    I am from a mixed Slavic background. I had a half Polish/half Ukrainian immigrant grandmother who taught me how to make pierogies. The dough was homemade. Her pierogies were so good!

    being a true Pollack who handmakes pierogi to this day from my great grandmother's recipe, I could not bring myself to try these. HOWEVER I was VERY impressed at the use of the farmer's cheese (the authentic cheese pierogi filling). It's nice to see some polish tradition, even if it is Americanized, being shared!

    I have a mixed Slavic background, which includes Polish. My late maternal, immigrant grandfather, was Polish. His wife, my late maternal grandmother was born in Canada and had parents who emigrated from Czechoslovakia (now two separate countries). My late paternal, immigrant grandmother was half Polish and half Ukrainian. Her husband, my late paternal immigrant grandfather has a Polish surname and has Ukrainian in him and maybe had Russian in him. I know all about Slavic food.

    I won't Dislike but I cannot Like either. I give you kudos for being creative but yeah as a Ukrainian I can quite confidently say that your Polish grandmother would be rolling over in her grave watching the sacrilege committed in this video =P. Sure the filling is one of the best parts of the perogy but so too is the dough. Also, you used dumpling wrappers not wonton wrappers which are considerably less thin, like paper thin to the point of being semi-transparent. You probably rescued these flavour-wise by cooking then in browned onions and bacon fat. The all important question, "Would I eat them?" Sure, they look tasty enough.

    Great idea using the round wonton skins as a shortcut. There are a lot of things I've learnt to do over the year from scratch and gladly do when we have guest but can't be bothered to waste the time for just 2 people. I like this shortcut.

    Dear Chef John, I’m Polish. At home we often prepare pierogi with potatoes and farm cheese, but we always add onion fried just until tender.The stuffing is even more delicious. By the way, these pierogi are known as Russian ones, however nobody knows why, as in the Soviet Union they are barely known.

    I so enjoyed your video. Haven't made homemade pierogies since I was a child. I'm ashamed to say that I have been buying them, frozen, from the grocery store all of these years. Not today or anymore! Your video was very well done and thank you so much for sharing!

    This is exactly the way my Ukrainian and Lithuanian grandmothers would make pierogies. The only difference would be that they didn't add cayenne pepper. I'm glad you added the sour cream at the end! That's definitely authentic. I love the idea of using the Japanese pre-made rounds. Certainly shortens the time to make them. Also, thank you for the egg wash around the edge of the pierogies before you close them up. That's the one piece of information I was missing when I make them and couldn't understand why they wouldn't stick together! My family also cooked up a lot of onions in butter and topped the pierogies with that, then added the sour cream on top. Damn... now I'm hungry! :)
