Smoked Pork Loin (Lunch Meat)
2# Pork Loin
1 Litre Water
1 cup Pickling Salt
5 Allspice berries
3 Bay Leaves
1 tsp.(each) thyme, marjoram, Caraway seed
2 cloves garlic

    Sad news about the guy that made this video. Did you try the brine? I brined 2 loins, and smoked the first one after 24 hours today. The texture and flavour was really good after just 24 hours, but it was way too salty. I think I should have rinsed it before smoking. I soaked it cooked in cold water to draw out some salt, not ideal. I have the other loin in the brine for 13 more days. I'm curious what I will get.
