Smalec is a Polish dish made from rendered pork fat, herbs, onions, and various optional ingredients. Most commonly it is spread on hearty bread and topped with a Polish pickle. It is often served with beer but moreover vodka. It helps absorb the booze and helps prevent "kac" (hangover). It is found in many pubs in Poland as we might see chips and salsa, bread and oil, etc. It is a winter time sustenance and comfort food. At one point in history, it provided essential sustenance in Poland as that was all that was accessible. Today, its even served in finer restaurants.
