Ingredients for a classic Griebenschmalz:
For around 750 g Griebenschmalz:
500 g Flomen (pork belly fat)
250 g pork backfat
Spices:
2 apples (tart apples work best)
2 onions
salt, pepper & marjoram to taste

This food also can be eaten with onions because it can balance the fat a bit. Other option to add some paprika and onions and eat with that. In hungarian cuisine we name it zsíros kenyér (bread with lard).
Will try it soon as well. I'm from Munich, but live in Sydney for over 7 years now, and obviously you cant get Griebenschmalz here...
Thyme and marjoram are ideal spices for "Griebenschmarz", then you cut down the amount of onions.
