Brisket and pork belly are two of my favorite things to smoke but they do have their drawbacks. Brisket flats are lean and often dry out while pork belly is extremely fatty and can be too rich. So naturally we had to find out what would happen if we combine the two! This was certainly our most ambitious meat glue projects yet…

This is such a cool concept, do more videos with meat glue!! I need to try this out 🙂 Also, have you ever thought about making different types of cuisine? I think you said in an earlier video that you used to live in China, have you ever thought about making any Chinese inspired recipes? I think that would be interesting to see! ✨

I think this is a wild and great idea, love the play into the flag but after your slice reveal, I immediately thought the cross section of the whole flat with the whole belly just bound by a single seam would have not only been a greater camera flare but also a better slice n bite when cut to the same strips you showed here. Great vid, totally tantalized by the idea of the combination but would love to see a single seam between the two. (if you go to smoke it again, would definitely like to see that fatty pork belly on top with the hatched crust for some added crunchiness but also think that as the fat rendered, it would soak down the the brisket that is being dried by the more direct heat)
This is gonna be a video Gordon Ramsay would react to and call Max a donut.

If you use two lean cuts, the results with meat glue can be even more impressive, with two completely different meats holding together as though they were the same muscle

It might also be better to put the pork as a layer on top instead so the fat can partly slip down into the brisket (and easier)

Find some super lean beef, pork, and chicken and glue that all up and maybe dry age, smoke and grill thin slices for a sandwich. That would be really nice. Even this would be way better with a bit more leaner cuts of pork for long hoggie sandwiches.

Great video. I have cured a pork belly, I have cold smoked it, then cut a half inch layer to glue on the meat side of the beef brisket. So. both sides of the brisket will have a layer of fat. One side will be pork bacon, that is. I was having second thoughts about it, I thought when the meats contract, they will separate. Then I have come across this video, which is encouraging, and I will go for it. Great work.

Well, that is a really odd statement.
Can you coat a steak in bacon and malic and citric acid (sour stuff) then sugar too and see what happens when it’s cooked
So unhealthy but so good. I'd say it's worth it.
Max, could you do Tuna and Salmon next? (I know...its fish, not meat.)
