How to Cook Octopus: Grilled, Sousvide, and SMOKED
Few things compare to perfectly cooked octopus. It has an incredibly tender and silky texture, and pairs well with so many different flavor profiles. Despite this, it can be extremely intimidating to cook.
In fact I never used to cook it because it just seemed too complicated. It’s naturally a tough protein, and in this video we explore three methods to achieve the perfect texture: simmer then grill, sous vide then pan sear, and lastly smoking. Needless to say I had never smoked an octopus before, but I was very happy with these results!

When I was little, my aunt took me to an Italian restaurant that served fried calamari. I had no idea what it was, she told me it was chicken..I ate it, sensed something was different but it was tender and delicious. I loved it!! A few minutes later, she told me it was squid..I was surprised, but I knew she told me it was chicken so I'd be more willing to try it. Cooking squid properly makes all the difference. Ever since that day at that restaurant, I became more and more willing to try new things and can thank my aunt for having me try squid at a young age. This looks delicious! Good job Max

Calamari is great, scungili so-so, but octopus belongs in the same trash can as tripe, brains, and other disgusting concoctions

Here in Turkey, octopus is a delicacy, especially in the west coast. I especially like it when its boiled and seasoned with vinegar, lemon juice and herbs. Grilled octopus is also delicious

I advise you to try a 4th way, my preferred one: simmering in its own water. Take a large pot, bit of butter and oil, slowly saute the chopped vegetables (onion, carrot, celery, ...) and spices (couple whole peppecorns, 1 leaf of laurel, whatever you like but be careful as it can get TOO tasty) over medium fire until caramelised (be patient, it takes time but its a crucial step). Then place the whole octopus over the vegetables, cover, turn fire to minimum … and cook until tender (1-2 hours depending on the size). And then let me know :) PS: after cooling I often grill it.

Speaking for all the fanatics out there, the plural of Octopus is actually Octopodes. Many people think its Octopi because its similar to other Latin words such as Fungi (Fungus), but Octopus is a Greek words with a different rule set for plural ending
Octopus is a staple in southern italian cuisine, it's amazing and so versatile! Always loving your videos Max and Sophie!

im my old restaurant we used to add pineapple juice when boiling and a wine cork ...not 100% sure why the wine cork works butbit does
You might want to try the Apulian "curling" technique! In a nutshell you have to beat violently the squid on the sea rocks until the tentacles effectively "curls" and remain in position even di rested. Such procedure results in an exceptionally tender squid, optimal for eating it raw (as sashimi) or also for cooking!

what do you think about using the marinade from the grilled octopus in the sous vide bag? my only experience making octopus did not go well. I blanched the entire octopus in red wine and bay leaves, then marinated it over night, and threw it on the grill the next day but ended up with a chewy, overdone octopus. will try your sous vide method!

It wouldn't just puff up and then die since the yeast would die since they consumed all of the fat/sugar of the dough? (depends of the time though)

i mean, to make pizza dough you have to let it rest in a warm environment (not exactly dry aged) to let the yeast develop to puff the dough up during the baking process

@@the_vba5384 what i'm about to say is unrelated, but i've heard of some people letting their pizza dough do a cold rise in the fridge for 2-7 days, but you can also just freeze the dough for later use once you've risen it as long as you want. apparently the longer you do it the better it gets

I cooked octopus once during a holiday in the South of Italy, it was young, I have just seasoned it and plopped it on the grill. It was stunning and delicious!!!
