How to Braise A Chuck Roast & Have a Rich Gravy for Biscuits

Braised Chuck Roast
1 LARGE CHUCK ROAST
1 CUP FLOUR
COURSE GROUND PEPPER & KOSHER SALT
ROASTED GARLIC POWDER (BADIA BRAND)
FREEZE DRIED PARSLEY & FREEZE-DRIED BASIL
FRESH ROSEMARY (OPTIONAL)
ONION (CUT INTO LARGE PIECES)
1 GARLIC CLOVE
1 STALK CELERY (CUT IN LARGE PIECES)
1 LARGE CARROT (PEELED AND CHOPPED)
2 CUPS CHICKEN STOCK
5 SHAKES WORCESTERSHIRE SAUCE
OLIVE OIL (OR CORN OIL)
1/4 CUP BUTTER WATER TO COVER
Set roast out at room temperature for 1 hour. Salt and pepper well on both sides. Dredge with flour and brown on all sides in a preheated skillet with oil. Add garlic powder, parsley, basil, rosemary, garlic, onion, celery, carrots, stock, Worcestershire, and butter. Cover with water and simmer on low for 5-6 hours, until meat is tender enough to separate with a fork. Take out meat and strain broth. Put 1/4 cup flour in a pan with 1/4 cup butter, brown. Finally, add 3 cups of reserved stock and cook until it thickens like gravy.

Tammy, you have made my FAVORITE meal right here❤❤ Chuck roast is the only roast I eat, as well as my adult children and their children. I also make Italian Beef with Chuck roast. I bake it low and slow, shred it up, add peperchini peppers diced up and some of the peppers juice. It is FABULOUS!! I owned a restaurant and it was my best seller. It flew off of the menu every day!! 💕🙏🙏

Looks so delicious. My mom every Sunday would slow roast in oven, low and slow. Was ready when we came home from church. My favorite meal, pot roast 😋. Love to watch u cook. Got me some white lilly flour. I'm up in Northeast, Ohio. I have Southern roots. Lol.
Everyone does theirs different. I do my in oven and it's just like that with more gravy. Be Blessed
I usually brown the roast for about 10 minutes and then put it in my roaster. Takes about 2 and a half hours. I Add carrots and onions. I like your method! Can add potatoes for the last hour- one pot meal.
My momma had roast made every Sunday. Made about the same way, minus rosemary. Best brown gravy made with Kitchen Bouquet. I loved to pick out and eat the potatoes.
I brown mine and put it in the crockpot ❤
I use my crock pot to make a Chuck roast. I add celery, onion, potatoes and carrots. Celery if I have it. I also add about 2 jars of beef gravy. Let it cook for 4-6 hours on high depending on weight of roast. Always delicious!!

You are just FANTASTIC Tammy! I love your accent and congratulations on being a Cancer survivor! Both my Mom and Dad would make Beef or Pork Roasts on Sundays in the fall and winter especially growing up...brings back memories. Roast with carrots, onions and potatoes is my favorite meal. I always cook mine on top the stove. Flour and brown my roast, take it out of the pan and lay my onions down to put my roast back on. I use water and better than bouillon roast beef seasoning. Add my taters and carrots put the lid on it and cook it for 3-4 hours. This looks delicious. I love my pigtail. I got the combo from your Amazon site. I just ordered your big measuring cup so I can make your puddings. Have a great weekend. Love ya!❤ Do you remember the roast with the bones? Do you ever do a heavy skillet biscuit for bean soup or any other soup. I grew up with that and my aunt that raised me just said it was skillet biscuits but everyone else said it was flatbread. Nobody does it the same as her and she said it was a southern secret.

Carrots do not have a skin/rind/peel. Peeling is unnecessary. Just give it a good scrub to clean it.
