Onion Rings and a Salad, a lighter dinner

Tonight, we decided we wanted a lighter dinner. So instead of a heavy meat and 3 meal we decided on a salad and onion rings. We love, love onion rings. Especially homemade onion rings. They are so easy and simple to make. Takes no time at all to cut up the onions, mix the batter, and fry them up.
Simple, easy, delicious. The salad itself is a complete meal. Try this today, tomorrow, or next week. You will be so glad you did.

Ingredients:
2 large sweet onions, cut into 1/2" rings
1 1/4 cup self rising flour
1 cup milk
2 Tbsp corn starch
pinch salt
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp cayenne pepper (or to your taste)
Directions:
Stir ingredients together and set aside.
Slice onions into 1/2" rings, separating them into individual rings.
Heat 2" oil in deep skillet to 325 degrees. When oil is hot, coat onion rings in batter and deep fry in batches for 5-6 minutes or until golden. Remove to sheet pan fitted with a wire rack to drain. Sprinkle with salt while hot. Continue frying onions until all are cooked.

    I'll have to try it sometime. But I do like onions so it doesn't bother me. Loving your videos. I've got to catch up on my viewing. I did something to my back snd was in ER last week. I've had to take it easy lately. Luckily I ad some videos done and ready to go. I'm better now but....it's heck getting old. 🤪❤️ Love you guys.

    Hi Karen, I think red onions are very strong. I was making a layered salad (Romaine lettuce, small shell macaroni, red onion, peas, shredded carrots, diced ham and shredded Swiss cheese, with a Mayonnaise Dill dressing spread on top, with 2 hard boiled eggs cut into quarters and placed in a decorative pattern. Sprinkle eggs with some Paprika for color) soaking the red onions eliminated the strong onion onion bite that red onions can have. I've never attempted making homemade onion rings, but you make it look effortless. So I will definitely have to make them. Yours look Delicious and so does the salad. It's Gonna Be Good. YUM

    You can't beat this for a great summer meal idea. I sooooo love onion rings. Added with a fresh salad and how refreshing. I love Vidalia Onions best for onion rings. I've heard about soaking onions but I never tried it. Good idea Karen....wish I could come eat...lol. Love and Hugs 🥰

    I have soaked yellow onions in ice water about thirty minutes or so, and it does work, they are not as strong. Great onion ring video, thank you.

    These look amazing Mrs. Karen, thank you for the recipe! I can't wait to try them. I dont know if it will work, but i also want to try doing this with shallots. They dont have as nice of rings, but i think they'll be good. I also have never made them using vidalia onions. i always just use a normal yellow onion but im betting the vidalia onion makes a delicious onion ring and cant wait to try it!

    I have never peeled a tomato! When I was a kid, we would go out to the garden on a hot summer day, pick a tomato off the vine and gobble it right down. It was still warm from the sun and oh SO GOOD!

    Hi Karen, I had to pop back on again real quick. Thanks for the tomato peeling tip, using the RADA tomato knife. I've had it for a couple of years, I don't like tomato peel, so I always peel my tomatoes, I always blanch them in boiling water, then in cold water before peeling. Did not think of using the RADA tomato slicer to peel the tomato, until I watched this video! DUH!! We had hamburgers for dinner tonight. I used the RADA tomato knife to peel the tomato for the burgers. WOW it's Awesome for peeling tomatoes. Thank You for the tip!!!

    You can use skewers and put them in your pan and flip them over. Saves your fingers from getting gooy

    I've never heard that hint before but will try it. I did see where when cutting onions to lay a wet paper towel beside it. I don't know if it works. Onions don't bother me. Lol.

    I use vegetable or canola but a good neutral oil. Peanut oil would be great if there are no allergies in the family. ❤️❤️

    I've had that big fork a long time. It's actually a Paula Deen item but no longer available. When you go to my store, click on the picture and it will open the store. The knife is in my Rada store. ❤️

    Hello. This is my first time watching you. You made a pretty salad but I'm wandering since you r husband don't really eat cumbersome and I think maybe you also said olives that you could have made 2 separate salads. I probably would have because then I wouldnt have had to spoon around it all to find what you each like in it. If how you made it works for you that's great. Your onion rings look amazing. I'd make them but I dont know what to do with a pot of oil when I'm done with it. What do you put yours in? I would just put croutons on my salad or have the garlic bread but not both. I know I'm criticizing alot but it's just what I would do. All your food looks wonderful and I'm sure it tasted yummy! I'll keep watching but I will promise to try not to comment so much. 😊🌹

    You're great. I wanted a pretty salad. He will eat a couple of cucumbers, but they bother him, so he doesn't eat much. He will pick out the olives if he gets one and give it to me. He loves everything else, so I don't mind putting it all on there. I keep my empty oil bottles to pour the used oil in. I will reuse the oil for more rings or even fries, great flavor. Keep commenting. The only comments that bother me are when people are really ugly and get nasty. ❤️❤️
