Chicken & Rice Casserole,
DO YOU REMEMBER that good old southern cooking?
When I was growing up, my granny was my favorite cook. My mama was also a fantastic cook, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. I have made it easy for you to learn how to cook like my granny and mama did with cooking tutorials for every recipe in our cookbooks. You can see how to order these by visiting us on our website. Oh, and no difficult-to-find or crazy ingredients! Just simple ingredients and delicious food. I am a Southern girl born and raised in Collard Valley in Polk County, Georgia. We went to church on Sunday, school during the week, and the grocery store on Friday, and that was our life: no vacations, no camping, just plain old southern country people.
If you learn to cook like my mama and granny, you will become one of the best Southern cooks. Thank you so much for being a part of this dream of mine.
NOW FOR THIS FAMILY RECIPE:
Chicken & Rice Casserole (Recipe not in our cookbooks)
4 TO 6 OZ. BOX LONG GRAIN WILD RICE
4 OZ. CAN SLICED MUSHROOMS, DRAINED
1 CUP MILK
1 CUP HOT WATER
10 OZ. CAN CREAM OF CHICKEN
10 OZ. CAN CREAM OF MUSHROOM
3 1/2 CUPS COOKED CHICKEN CHOPPED
PACKET OF RICE SEASONING FROM BOX
1 MEDIUM ONION CHOPPED
6 OZ. FRENCHS CRISPY FRIED ONIONS
1 CUP FROZEN GREEN PEAS, OPTIONAL
Mix the seasoning pack (from the rice box), milk, and water together in a large bowl. Add the cream of chicken & cream of mushroom soup, then mix it all up and add rice and peas.
Finally, add onion, mushrooms, and chicken.
Spray a 9x13 pan with cooking spray. Pour chicken mixture into baking pan. Top with crispy fried onions and cook for 1 hour at 350 degrees!
Take it out of oven and let it sit 20 minutes prior to serving. Enjoy!

Doing this also and I found a cute old fashioned recipe box and for nostalgia writing them on recipe cards and putting index cards for different varieties of recipe. She'll love it. Thank you Tammy. 👍

It’s a great recipe. I’ve made this for years and it’s delicious. Great for a potluck and I’ve been brought to the hospital to feed family members who were outside in the family waiting area. I also add grated cheese and sometimes I even add a can of cream of cheddar soup!

I'm saving this one to try really soon. I've been wanting a good chicken and rice casserole recipe and this one is going to work for me. I add broccoli or frozen mixed veggies and bell peppers and I use cream of chicken with herbs soup.

This casserole looks good. I dont like mushrooms to good so I would omit them and put some celery. I enjoy all your videos and I do prepare some of them. I plan to make your peanut butter cake soon.

😊 This looks fantastic! Tammy what in the world is going on with onions these days? I have always used Vidalia onions and they were great BUT for the last several months they look the same but they are too hot to be eaten easily. I hope you have an answer to this mystery. Thanks for your help.

Can you use white rice instead of wild rice? If so, should you use minute rice or regular long grain white rice?
