Coconut Meringue - Chocolate Meringue - Lemon Meringue - Pineapple Meringue
DO YOU REMEMBER that good old southern cooking?
When I was growing up, my granny was my favorite cook. My mama was also a fantastic cook, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. I have made it easy for you to learn how to cook like my granny and mama did with cooking tutorials for every recipe in our cookbooks. You can see how to order these by visiting us on our website. Oh, and no difficult-to-find or crazy ingredients! Just simple ingredients and delicious food. I am a Southern girl born and raised in Collard Valley in Polk County, Georgia. We went to church on Sunday, school during the week, and the grocery store on Friday, and that was our life: no vacations, no camping, just plain old southern country people.
If you learn to cook like my mama and granny, you will become one of the best Southern cooks. Thank you so much for being a part of this dream of mine.
NOW FOR THIS FAMILY RECIPE:
Granny’s Chocolate Cream (Vol. 1 Cookbook Recipe)
REFRIGERATED PIE CRUST
1 CUP SUGAR
2 HEAPING TBSP. COCOA
3 TBSP. CORN STARCH
1 CUP EVAPORATED MILK
1 CUP WATER
4 EGG YELLOWS (SAVE WHITES FOR MERINGUE)
1/4 STICK SALTED BUTTER
1 TSP. VANILLA
Preheat oven to 375 degrees. Put pie crust in 9-inch standard pie plate. Crimp edges to form edging (see video tutorial). Prick pie crust with a fork and bake for 14 minutes or until golden brown. Take out of oven and turn down temperature to 325 degrees. In a glass batter bowl whisk together sugar, cocoa, and corn starch. Add milk, water, and egg yolks, whisk well. Cook in microwave on high for 4 minutes. Remove from microwave, whisk well making sure to whisk along sides and bottom to incorporate starch that may have settled. Continue to cook at 1-minute intervals until thick and creamy. Take out and whisk in vanilla and butter. Place in pre-baked pie crust. Top with meringue. Seal meringue around edges of crust leaving no holes. Bake in 325-degree oven for 25 minutes until golden.
Meringue:
4 EGG WHITES (ROOM TEMP)
1/4 CUP SUGAR MIXED WITH 2 TSP. CORN STARCH
1/2 TSP. CREAM OF TARTER
Preheat the oven to 325 degrees. Add egg whites to a clean dry mixing bowl. Use stainless steel if available. Mix whites on high speed until they begin to foam. Add cream of tartar and gradually add sugar/starch mixture while beating on high. Beat until stiff peaks form (do not over beat). Should be ready within 3 minutes.

    I'm sure some people think I'm just picky but I always remove those white pieces from my eggs. They have a name but I don't remember it. You make these pies seem so easy. They look delicious. I think we'll love them & I don't have to heat up the kitchen.😊

    Love these cream pies. I want to start making them again. I have made a Lemon Meringue Pie for my Daddy when I was a teenager. I adored my sweet Daddy. I told him I was never leaving home so I could make him pies. Lol ❤ But I did, and 8 years later I went back home after being physically and emotionally abused for 8 years. Even my Judges and lawyers told me I stayed 8 years too long. By body just totally collapsed. May God stop all this domestic violence. Sorry for my stories.     Love ❤️ love 💕 love 💗 ya Tammy just so you know iam baking as many of your pies and cakes this summer for my dad. He loves desserts I’ve always bought frozen pies. But ever since I met you I am going to learn how to do it your way. Lol 😆 he has always loved the old fashioned way to bake so what better than start with you. Iam going to start with Texas cola cake. He loves loves coke so I know he will love that. My dads health is not in the best so I need to do all this fast because life is short amen 🙏🏼.

    I use a small sieve to get the white things off of my egg whites. I cannot stand them in my pudding. I always use your method to do my puddings now, it works like a charm! I also tell people about this method too! Thanks for the yummy video!

    I like the fact that you do not temper the eggs, my Mom never did, nor did my grandmother or aunties. I did it once, and it was the only time I failed at making a pie. It’s just an added step that absolutely does not need to be used. I’m thinking about making a butterscotch, next to German Chocolate, it’s my favorite.

    About the pineapple pie: What about draining your pineapple first, then use the juice instead of water in the pudding mixture. I do this with pineapple upside down cakes and it really adds to the pineapple flavor. Also any directions if you want to use a graham cracker crust?

    What brand pie crust do you use? I've tried Pillsbury and great value. Did not like the taste because they tasted like can biscuits which I don't like. However I want the convenience of the kind you use

    Does the cornstarch in the meringue help with soaking up extra egg white? I always tend to overcook my meringue because I'm afraid the whites won't cook enough.
