Homemade Cream Puffs - Super Easy to Make
CREAM PUFFS 1/2 CUP SALTED BUTTER
1 TSP. SUGAR (optional)
1/4 TSP. SALT
1 CUP ALL-PURPOSE FLOUR (WHITE LILY)

    Hi Tammy, I love that you attempted and did very well on your 1st time making cream puffs. I’m of Italian heritage and we call cream puffs “Zeppole”. They are often made in celebration of St Joseph’s Day on March 19th, but we make them often throughout the year. I too have been making them for years and I want to give you a few tips. When you mix in the flour to the butter and water, you want to keep that on the heat until it pulls away from the pan and begins to form a ball. Let the mixture cool for at least 20-25 minutes before adding your eggs. (If you use your standing mixer with the paddle attachment, you can beat in the eggs all at once until the mixture becomes really smooth.) I use a large kitchen tablespoon to drop the batter. Then to make peaks, similar to the ones on your meringue on pie, just use your fingers to pinch and pull up the batter. Bake on 400 for the 1st 15 minutes, then reduce temp to 350 for another 15- 20 minutes. After that, turn off oven, but leave the puffs in there until the oven cools off. This will keep the puffs nice and crunchy on the outside. Now before you fill them, to keep them from getting soggy when you fill them, cut them in half horizontally and gently pull out the wet webbing on the inside of the top and bottom of each split puff. (This makes a huge difference!) I usually fill mine with a homemade vanilla French custard with folded in whipped cream. Then, put the top of the puff back on. You can dip the tops in chocolate like you did or just dust with powder sugar for a very pretty presentation. With that said, I think you did a very good job Tammy! Well done! 👍🏻👍🏻👍🏻

    I just cut my cream puffs in half cross wise and spoon the cream inside. Always do it this way, it’s much easier plus you can put way more cream inside. Dust with powdered sugar before serving.

    The powdered sugar would be in place of the chocolate topping. I like the chocolate better tho I have never put chocolate on top. Used to make these often when I was cooking supper (with my younger sister) before Mom and Dad got home from work. Oh my that is a long time ago, In the 1950's.

    I made them forever, I cut the tops off and clean out the mushy egg left in the inside. Then I sometimes fill it with lemon cream or butterscotch pudding and put the tops back on and dust it with 10X sugar. It's a awesome cream puff.

    Up here in northern Indiana we have an Amish-run bakery over in Middlebury, about 20 miles from our home who are known for their caramel frosted vanilla-filled donuts (they also have eclairs), and meat and cheeses and homemade canned items and a small cafe. People drive from all over to go there. Every year on their anniversary they set up a huge tent, bring the food out and it's all totally free! Amazing place.

    My precious grandma in Pennsylvania (Amish country) used to make these all the time and they were amazing! They never lasted past the hour that she brought them out. Yum!! I’m SO excited to make these for my kids now.

    Looks delicious... Easy piping bag... Zip lock baggy. Cut the tip off corner and slide the piping tip in the corner. Works in a pinch. 😊 Thanks for showing an easy way to make them. 😊

    I just made cream puffs for my granddaughters birthday party . Just sat down to relax and watch a couple of videos before everyone shows up and here you are making them. I put the flour mixture in my kitchen aid and start it to let it cool just a little then pour all my eggs in at once works great every time.

    I love the way you talk, but I have to say I love your puffs. They don’t look like the hotel even and I love it. It’s your signature. I’m a pace Chef. I’m open to everything. I worked at the Ritz Carlton South Beach Miami. They’re very stuck up. I’m not gonna lie to you. I’ve never been that way.     I've made them for years since my mom died. I like them with plain old whipping cream sweetened with a bit of sugar. Or just buy a spray can of real whipping cream, not the artificial one, forget the name. You know what else you can use the cream puff shell for if in the rare occasion you have one or two left over.. for a fried egg sandwich in the morning..

    Tammy I make these all the time, usually after they bake for so long you take them out of the oven, poke a hole in the side and return them to the oven to cook the middle.

    I saw you on Facebook today and I caught what you were talking about. I don’t agree with Facebook at all for some of the things they do. There’s people on there that you bring against page all the time and they shouldn’t be able to do that and they’re doing you like that they should stop it. I love you girl. I love your videos. I enjoy watching you.     Tammy, SOOooo pleased to see you using the same whisk we use. It's formal name is a Danish dough whisk. We had one w/a wood handle but the 2 parts separated so I like this all-metal one better. EDIT: The Puffs collapsed a bit while they cooled. If you cut a slit or 2 in the sides right out of the oven the steam inside can escape and the dry out slightly. Then insert the filling tool into the same slits. Wish I were there to TASTE them!!!

    Awesome cream puffs for first time Tammy! You go girI! I have made these for 50 years and while you were searching to get a utensil as it is hard to beat the eggs in, it actually helped the cream puff mixture dry a little which will make them rise better in the oven. I am a Culinary professional & I always use a mixer! The cost of food going up means shortcuts from vendors. We found there is more water in the butter these days. Use good butter. Plus the amount of liquid in the egg can make a difference. The eggs are your leavening to make them rise! I think feeding with a mixer actually incorporates the eggs better. Fun to watch you today - Your Cream Puffs are Five Star!

    My Mom used to make these at Christmas time. When the dough got stiff, she used to hand the bowl to my Dad. His arm strength made quick work out of it.

    Well. Well well. I looked on goggle. And looked up subtitles and I saw cake flour can be use. So I did ur recipe with cake flour. And baking them as we speak I’m praying that they turn out as good as urs. Looked and tasted. I’ll tell u. In the morning cus it’s 2:15 am in the morning I didn’t happen to look at the time before hand I just wanted something sweet.

    Im 72, an mama used to make these. She didn't have a piping bag. She very carefully made a slit on the side. And took 2 spoons and pushed in the cream filling. I grew up thinking thats how they looked. But either way they taste soooo good.

    You can use sandwich bags. I did cake decorating several years . The sandwich bags were great when you ran out of reg. bags

    I thought the same thing as you. I think I will make lemon curd tomorrow and use it to fill the cream puffs, although it does sound good with vanilla filling with cinnamon and nutmeg too.

    I live in the north and don't know anyone particularly fond of cream puffs around here. I don't go to bakeries, though. Don't know where one is around me. But a couple buffet restaurants have small cream puffs on their dessert trays. I don't like them. They have a whipped cream filling and aren't that flavorful. But your recipe sounds delicious! When I was, a teenager we lived across the street from a bakery that made Long Johns (rectangular doughnuts) and the filling tasted like vanilla pudding. They also frosted them (some with chocolate which, I think, was my brother's absolute favorite but I preferred the maple) and decorated them with M&M candies. They were my brother's favorite and we haven't found another place that uses that style of filling. So, seeing you make a pudding filling got me excited! Now I want to try to make either these cream puffs or an actual Long John doughnut with that filling, for my brother.

    My mom used to make them a lot on the farm with fresh eggs and cream. She would cut a hole in the top and put the whipped cream in it. Personally I like pudding in them better. I haven't thought about them in a long time. I wasn't particularly crazy about them but yours look yummy so I will be trying it. Thanks for the memory~~God's blessings.......🥰🥰🥰

    Yum, profiteroles, pate a choux dough, It’s pronounced Pot O Shoe…lol. I remember watching the French Chef Jacque Pepin make them years ago. Here in Queens NYC or Brooklyn we have many Italian Bakeries that make them fresh daily, here most are stuffed with an eggy vanilla custard and you can get them dipped in chocolate or not. I like them plain with custard. They are a light delicious pastry. On Easter or Christmas you make tiny ones, not stuffed, you toss them in a honey sugar syrup and sprinkle them with the tiny round rainbow sprinkles as an easier way to make struffoli.

    Daddy use to make cream puffs many years ago when I was in high school (I’m 78). He made Bavarian cream to fill them. On occasion he would mix a little lemon curd, orange marmalade or raspberry jam into the cream. Heaven..

    These look so good and bring back great memories. I learned to make them when I was in high school. And like others have mentioned, I filled them with pimento cheese and tuna for bridal showers. I think my recipe said to poke holes in them when you get them out of the oven to release the steam. Makes them more crunchy. Thanks for the memories!

    This ice maker is best for just two people, so if you have more people in your home I would buy a different one a bigger one. I'm actually thinking about getting a larger one and getting a full size refrigerator that doesn't have a freezer in it. But this ice maker has been great but you do have to use bottled jugged water for it not tap

    My grandmother was French Canadian. We always split them, removed part of the inside and filled them with cream (my grandmother used Dream Whip). These work very well using sugar free pudding and heavy whipping cream too. The strawberry is awesome. Lemon is great too.

    I made this French choux pastry years ago and don't know why I stopped. You can also slice them open and fill with softened ice cream and freeze. Thank you for the reminder.

    ✍🏼Hello Tammy and Chris and fur babies🐾🐾🐾🐾 I made Cream Puffs and Eclairs about 30 years ago and they are really easy to make and like you don't know why I haven't made them more often. Thanks for jogging my memory by making the Cream Puffs tonight. I've decided to make the Choux paste (dough)that I'm going to get out my recipe and surprise my daughter with a batch. I wasn't sure what to fill them with so Ill be buying some instant pudding, as you have suggested. Sorry your arm was bothering arm.     I use my mother's recipe, like this one but no sugar. It is very hard to mix and the older I've gotten the harder it gets! 😂 Still make them for my G'sons but I put pudding in them. Thanks for sharing

    This pate choux dough makes delicious profiteroles. You make small walnut size balls, deep fry them, then roll them in cinnamon sugar. So good.❤

    You can make them into swans easily. Form them in more of an oval. Separately, pipe some candy canes. Make your hole for filling close to the end on top. After filling the cream puffs, stick the necks/heads into the same hole. Sprinkle with powdered sugar. They really do look elegant, My husband loved cream puffs. Wish I had made them more often for him.

    That sounds cute! It took me a while to figure out that "pipe some candy canes" means to pipe the batter in a cane shape, not pipe onto actual candy canes, though! 😂

    I love cream puff but never made the either, so thank you for making it easy. The burners if you bump them just push them back on cause this can make them not light and yellow flames or uneven flames. If the groves are blocked with food you'll get uneven flames.

    The first time I had one up North it was a cold day. They took a scoop of vanilla ice cream in with hot chocolate syrup on top. A cup of coffee..so good ❤❤.

    They also call them knee caps . . . they slice them open and put the cream in the middle like a sandwich.. . . Thanks for the recipe . I love these things.

    My grandmother had a bakery and cream puffs was my favorite dessert! She would pipe three miniature holes in the top of the puff for the Bavarian cream and, afterward, gently top off with chocolate drops. Once cooled, then she would cover the top with the chocolate so the holes would be covered and not noticeable. I have not found a replacement recipe that tasted like hers. I plan to make these to cherish the memory!

    I used to walk into town and pickup pop bottles when I was about 10. I might stop at Dairy Queen after turning the bottles in for the money to get a treat. I also would buy a couple of cream puffs if I had more money and give one to my dad. I then started making them as I got older. Yumm.

    These look divine! I make the puffs and fill them with chicken salad or ham salad. Make them tiny, sweet and savory fillings for showers!

    OMGOODNESS! I just always imagined that would be hard but watching you show us how easy they actually are! I would have thought that JELLO instant would break and get watery after it set overnight. A cooked pudding I was thinking would hold together better. If everyone was going to eat it right away then it would not matter. Putting your chocolate on top just made it “over-the-top”!! You rocked this desert Tammy! ❤

    Hi there in RSA we get them n make them alot..we even have them dipped in caramel instead of chocolate n they lovely ...my cousins wedding cake was a tower of small ones stacked with chocolate cake base...n yours look so delicious....
