Golden threadfin bream soup with fresh yam and tofu

鮮淮山瓜衫魚豆腐湯
材料:
瓜衫魚一斤半
鮮淮山一支(約12兩)
豆腐一磚
薑一舊
處理:
1. 魚,打鱗,清除內臟,清水沖洗乾淨,擎乾水。
2. 薑,清水洗乾淨,打直一開二,拍鬆。
烹調:
1. 大火在鑊中燒熱油兩湯匙。
2. 另一邊,大火煲滾一鑊水。
3. 放魚及薑,落鑊煎香。
4. 魚,一面已煎至金黃色,反轉繼續煎,壓爛。
5. 水已煲滾,加入魚內,大火滾起,轉中火,冚蓋繼續煲。
6. 另一邊,預備一隻乾淨的鑊。
7. 淮山,去皮,洗乾淨,切大舊,放鑊內。
8. 豆腐,切一舊舊,放淮山內。
9. 魚湯已滾了約15分鐘,過濾到淮山及豆腐內。
10. 魚湯,冚蓋,大火滾7分鐘。
11. 完成,可享用。
Golden threadfin bream soup with fresh yam and tofu
Ingredients:
Golden threadfin bream 1.5 catty
Fresh yam 1 log (about 12 taels)
Tofu 1 cube
Ginger 1 No.
Preparation:
1. The fish, get it scaled. Remove intestines. Rinse thoroughly. Drain.
2. Ginger, get it rinsed. Divide it into 2 shares vertically. Beat well.
Steps:
1. Heat up 2 tbsp of oil at high flame in wok.
2. On the other side, heat up a wok of water at high flame.
3. Put fish and ginger in the wok, fry well.
4. The fish, one side has been fried into golden yellow, flip over and continue frying. Squash it.
5. Water boils up, pour into the fish. Heat up at high flame. Then turn to medium flame. Cover up the wok and continue boiling.
6. On the other side, get ready for a clean wok.
7. The yam, get it peeled. Rinse with tap water. Cut in big pieces. Put in the wok.
8. Tofu, dice in cubes. Put in the yam.
9. Fish soup has been boiled for about 15 minutes, filter it into the yam and tofu.
10. The fish soup, cover up the wok, heat up at high flame for 7 minutes.
11. Complete. Serve.
