Snake head mullet moisturizing soup

生魚去濕湯
材料:
赤小豆、扁豆共半斤
黑豆4兩
豬腱半斤
生魚2條(每條約10-12兩)(已清除內臟及打鱗)
冬瓜2斤(已去皮)
薑一小舊
處理:
1. 赤小豆、扁豆及黑豆,放大碗內,清水浸30分鐘。
2. 豬腱,清水洗乾淨,擎乾水。
3. 生魚,打鱗,清水洗乾淨血塊。
4. 冬瓜,去籽,清水洗乾淨,一開四。
5. 薑,清水洗乾淨,拍鬆。
烹調:
1. 大火在鑊內燒熱油半湯匙。
2. 生魚,放鑊內,轉中慢火煎香。
3. 另一邊,大火煲滾一鑊水。
4. 魚,一面已煎至金黃色,反轉繼續煎。
5. 魚,兩面都已煎至金黃色,加入薑片煎香。
6. 魚,轉大火,加入大滾水2升,冚蓋,大火滾起,轉中慢火,煲20分鐘。
7. 赤小豆扁豆及黑豆,清水沖洗乾淨,擎乾水。
8. 預備好湯煲。
9. 所有材料,放煲內。
10. 湯已煲了20分鐘,過濾湯至煲內。
11. 材料及清水大約有5升半的容量。
12. 湯,大火滾起,轉中慢火,煲75分鐘。
13. 湯,已煲好,熄火,焗一小時或以上。
14. 完成,可享用。
Snake head mullet moisturizing soup
Ingredients:
Rice bean and hyacinth bean 0.5 catty
Black turtle bean 4 taels
Pork shank 0.5 catty
Snake head mullet 2 Nos. (10-12 taels per each, already removed intestines and got it scaled)
Winter melon 2 catty (skin removed)
Ginger (small) 1 No.
Preparation:
1. All the beans, put in a big bowl. Soak in tap water for 30 minutes.
2. Pork shank, rinse with tap water. Drain.
3. The fish, get it scaled. Rinse thoroughly.
4. Winter melon, remove seeds. Rinse with tap water. Divide it into 4 shares.
5. Ginger, rinse with tap water. Beat well.
Steps:
1. Heat up 0.5 tbsp of oil at high flame in wok.
2. The fish, put in the wok. Turn to medium-low flame. Fry well.
3. On the other side, heat up a wok of water at high flame.
4. The fish, one side has been fried into golden yellow, flip over and continue frying.
5. The fish, both sides have been fried into golden yellow, add in the ginger and fry well.
6. The fish, turn to high flame, add in 2L of the boiled-up water. Cover up the wok. Heat up at high flame. Turn to medium-low flame and boil for 20 minutes.
7. The beans, rinse thoroughly. Drain.
8. Get ready for a pot.
9. All the ingredients, put in the pot.
10. Soup has been boiled for 20 minutes, filter it into the pot.
11. Ingredients and water are with a volume of 5.5L.
12. The soup, heat up at high flame. Turn to medium-low flame and boil for 75 minutes.
13. Soup has been boiled well, turn off fire. Leave it for an hour or more.
14. Complete. Serve.
