    I made this yesterday. Just a few tips. The heavy pot over the belly squeezes out a lot of the layers of fat while roasting. If you like the layers of fat, you may want to choose another recipe. When you flip the belly after an hour, the skin will be soft. You will need to assist the crackling process by moving the meat closer to the top element of your oven. You may even need to switch to the grill mode and increase the temperature. But watch it closely because it will easily burn. Hope this helps.

    Marion, I know this is one of your older recipes and you have a lot more pork belly recipes since. But my goodness, this recipe is top tier, super-God level perfect.     IKR, "Leave in fridge for a few hours or overnight" ... but I wants it now!!! Currently debating if I should just roast it now or let it stay in the fridge overnight.

    Thanks for the video! I always had issues with the excess liquids and watching out not to dry the meat out, most of the time others recommend just surrounding it with tinfoil, some expert chefs like ramsay who focus too much on everything else and then get a not so crispyy more chewy skin. Just doing the first upside down part helped alot.

    her method worked for me also but had to guess on the temp. and her cutting scheme made it too salty. a hole type tenderizer worked better.

    knotkool1 it was on her description box...which takes you to her site👍INSTRUCTIONS STEP 1 First up, you need to prepare the pork belly…this is a crucial step to achieve crispy crackling. Pat dry your pork belly with paper towel. Take a very sharp knife (a sharp utility or stanley knife works well) and cut lines across the pork skin about 1 cm apart. You want to cut through the skin and but only a couple of millimeters into the fat underneath. Now rub the skin with about a tablespoon of salt. Sit your pork belly on a baking tray and chill in the fridge (uncovered) for at least 2 hours (overnight is even better). STEP 2 Preheat oven to 200°C/390°F. STEP 3 Pat dry the pork skin with paper towel. Rub the skin with a little oil and sprinkle with a little extra salt. Place the pork belly skin side down in a roasting dish. Top with baking paper and place an oven-proof weight on top (a cast iron pan or a heavy casserole dish will work well). Roast the pork belly for 1 hour. Then remove the weight and baking paper and turn pork belly over so it is skin-side up. Roast for a further 10 minutes.

    The principal is that the fat renders out, then it deep fries the skin in its own fat. It definitely works :-)

    @@sublimegirl1 I've done it with 1/2 TSP each of salt, white/black pepper & garlic powder, and 1 tsp each of 5 spice powder and sugar (on the meat only)...and it was great! Maybe you can try that if you want a lil more seasoning.

    Janice Hamilton After placing salt and leaving the pork belly in the fridge for 5hrs, i noticed little to no moisture, compared to hers :’( Is it because I didnt add enough salt?

    I’ve tried both salt and vinegar techniques for my roasted pork and based on my experience, your salt technique works better! I got that crackling look on my pork and didn’t manage to achieve that with the vinegar technique. The salt is really helpful to completely dry out the pork skin.

    Tip for anyone, just cook it in air fryer! Crisp it without having to wait 24hrs or salting the top!!! I did it and I was like what the heck!

    Don’t think your way would be the same result. The salt conditions the skin, makes it light and crunchy without being tougher and chewy.

    Good question! I left it for 10 minutes as well and it did not turned crispy so now I'm having to raise the temperature. I am also wondering whether we should broil for 10 minutes .

    The first time I tried this it came out BEAUTIFULLY. The second time the skin stuck to the pan, it was chewy and got way too dark, even though I did exactly the same thing, even allowing the salt to withdraw more moisture from the skin. I wonder what went wrong. Could I bake it on a metal baking pan instead? Or put parchment in the bottom of the pan?

    It did? After an hour, the skin was still so soggy... 😔 Did not turn out like this, so heartbroken (very dramatic, but it was suppose to be our New Year's lunch roast)

    Was tentative with this method as I've cooked it other ways with great success. Should have gone with my gut and gone with the old method. This method didn't work. Ended up with a soft, rubbery and 'gluey' skin. Almost resembled the rind off bacon. Had to broil it to try to try and get some crackling out of it, but it has dried out the meat.

    Jay Windross I’m going to try this tomorrow and let you know...😊 if it happens the way you say ...I have a backup plan👍...which is to cover the meat part with foil and just have the skin exposed to broil...I’ve tried many of her recipes and they’ve always turned out awesome😊...not once have I had a failed recipe from her...I even did her pork belly roll with stuffing and all...which was a hit with my family over the holidays...👍 the skin was crunchy...and taste was on spot...keep safe!😊👍😊

    I stand corrected...I did and followed the recipe...and yes...this is a first...for me to write a not so good comment...I ended up doing my back up plan...which worked...I ended up broiling it but I wrapped the meat part with foil first and moved it to the top rack...thus didn’t dry up the meat...other than that...it turned out great...😊 but I guess for this recipe...I, too am going back to my original recipe👍...taste was still very good...meat wasn’t dry and got the crackling of the skin👍...but her other recipes always turned out perfect 👍 stay safe!😁

    @@wilange the only thing I can think of is that I didn't give it 'enough time' to turn to crackle. I didn't want it to overcook though.

    Jay Windross it is clear that this method is not a good method. I don’t know why people are actually following. Anyone with a passion for asian cuisine would suspect. Or anyone with asian parent who know remotely how to cook would give this one a no go

    To get the belly lay flat when roasting normally 1 would poke the belly with metal skewer. Never thought of using a heavy weight tray and baking paper. Very good improvised tutorial..

    You're very welcome Sheila! 😊😊😊 Japanese tonkatsu sauce (basically a barbecue sauce) is an epic dipping sauce...or any kind of chilli sauce! 👍

    Try garlic, sugar (acoording to the level of sweetness you like) and 1:1 soy sauce & plain white vinegar. You can add optional chili flakes or cayenne powder for a little heat. Then just mix all. It’s a foolproof recipe. 👍

    Just as a heads up, I tried this the other day, and it didn't work. My feeling is that my oven just doesn't get hot enough to crackle the skin. Instead, i just removed the pork and pan-fried it for five minutes, it worked a treat anyway!

    Yes, tried it today, same results as @rubi b. Nice crackling and easy recipe. Wipe the soft skin before placing in oven for final crackling

    im a chef and i say, put whatever you like + chicken stock in there. Also you will be able to slowcock it and make it melt in your mouth. This is a verry christmasy dish where i am from so i usualy use ingredients with that in mind.

    I tried this tonight. Skin was patted dry, left overnight in ref, i followed instructions. Alas I'm so sad, it did not turn out right. I had to fry the skin after the 1.5h roast to get the skin crunchy. 😥

    Same here I followed the instructions to a tea... and I am not a novice cook I'm 68!! Going back to my tried and tested method. I have had to remove the soft skin and continue roasting on its own :(

    SECOND PORK BELLY IVE WASTED DOINNG THIS! I flip it after the hour and my crackle is soggy skin! Dried it out with salt in the fridge and everything wtfffddf

    If your skin is soggy, it sounds like the pork may not have dried out enough and has released juices. Also, perhaps the oven wasn’t hot enough. After taking it out I have found I need to move it one rung higher to the grill and heat increased to 210°, perfect every time I’ve tried this.

    Usually we let the pork rest for at least 15 to 30 minutes to keep it moist..but of course every chef has their own style..and it's so delicious not everyone can wait that long
