Jacques Pépin's anchovy butter recipe is an excellent addition to your next meat or fish entree. This compund butter with herbs is fantastic with Jacques' grilled steak with zucchini recipe.
What you'll need:
2 oz unsalted butter, 1 tbsp anchovy paste, 1 tbsp parsley, tsp lemon juice, salt and pepper

    I love making various compound butters. I use them when I'm roasting. Spread the butter on the meat, add salt, then either go low and slow, or use a mathematical method. The butter does penetrate the meat and leaves a wonderful flavorful crust. I think I'll take a couple sticks and a tin of anchovy filets with garlic and herbs and other things and make something wonderful I can keep in the freezer.

    LOVE Mr. Pépin. One of my inspirations to start cooking for myself. I appreciate his approachable recipes and style. My fave episode of his was one where he forgot to add mushrooms to a dish and he used it as a teaching moment instead starting over/reshooting it, telling us that sometimes things don't go perfectly and you adjust and do your best. Have always remembered that.

    I love this idea but I don't know if mr pepin would get in trouble with brands. it would be nice if he could talk about what he thinks are the necessary types of knives for the kitchen for sure

    Jacques has several videos about knives. He has recommended three types. If you punch in Jacques Pepin, knives U-tube you should find it. Get a good quality sharpening steel.

    Noticed Mr. Pepin doesn't use a blender to incorporate all that ingredients. He uses old school method, but works just the same. I supposed you can substitute margarine for the butter as well. This looks delicious. Great job.

    The people @ Knifewear, would absolutely cringe as Jacques, chopped and scraped his Japanese style knife. Dulling the edge. But I'm sure he has a plethora of knives to choose from. Jacques would probably shrug and move on. The master.
