Looks very good. I used Black Strap Molasses instead of sugar, and added a few ground Juniper Berries with the black pepper corns. I had Pork Loin I needed to use. Fresh side (Bacon) would be better. I will smoke this with Pecan wood to a golden brown.

Hi from Rome. Hi tried your cooked ham recipe and it came out perfect. Thank you.. Now I want to try this bacon, but my question is, why do much nitrite salt in comparison with the ham. I use nitrite salt 0.6..

Из Волгограда смотрим. Через два часа будем доставать из духовки ,через два с половиной часа -дегустировать. Отзыв будем писать завтра.

Спасибо за красивый ролик. Я делал подобное ( бекон) за 1ч 40мин при минимальном огне в духовке температура внутри мяса достигла 80-ти градусов и продолжала расти; думаю,что за 3ч в духовом шкафу мясо станет сухой корочкой сверху

Приготовила по этому рецепту, а другой кусок 45 мин варила в специях и луковой шелухе для сравнения вкуса, др. был вкуснее, вот такой вердикт от моей семьи. Надо пробовать и выбирать. Всем успехов.

Такое надо варить заливая исключительно холодильной подсоленной водой на тихом огне и медленно доводить до темпер бульона до 70 , 80 градусов в течении часов 4. Так как нитритная соль при темпер 100' превращается в яд.
