(Stir-Fried Fish Fillet with Ginger & Spring Onion)
Ingredients:
250g of Tiger Grouper fish slices (marinated with salt, white pepper, and Shaoxing wine)
10 -12 slices of young ginger
Some spring onion, cut into 5cm (2″) segments
2 cloves of garlic, chopped
Enough amount of corn starch or tapioca starch (for coating)
Seasoning:
½ small bowl of chicken stock (Ah Pa’s homemade chicken powder diluted with water)
A little bit of oyster sauce
Pinch of salt
Pinch of sugar
A little bit of Shaoxing cooking wine
1 - 2 tablespoons of light soya sauce
Corn starch solution (1 tablespoon of corn starch mix well with 3 teaspoons of water)

    Thanks for this lovely easy recipe Ah Pa. I’ve seen this fish fillets being sold in DTS but I wasn’t sure how to cook it and now I do😀 I’ll add it to my next order from them. My husband loves fish so I’m always looking for recipes with fish to make for him.     Hi Ah Pa, if I don't want to deep fry the slice fish at which point of time do I stir fry slice fish, is it during the stir fry of ginger ,garlic n spring onions or after making the gravy ?

    If u dun deep fry the fish, then u can fry it after the gravy too but allow it to simmer. Btw, if without deep fried, the fish meat can break easily.
