Ingredients:
200g of Barramundi fish cutlet
1 teaspoon of Fermented soybean (taucu)
1 teaspoon of chopped garlic
1 teaspoon of chopped ginger
Some chopped spring onions (to garnish)
Some fresh corianders (to garnish)
Some chopped bird’s eye chilis (to garnish)
Seasoning:
1 bowl of chicken stock
A little bit of light soy sauce
A little bit of shao hsing cooking wine
Pinch of salt
Pinch of sugar
½ tablespoon of oyster sauce
Few dashes of white pepper
1 teaspoon of dark soy sauce

    Ah Pa, a heat resistant nylon flip over ladle makes flipping over of the fish and egg omellet so easy I just bought one and found it really so so easy to flip. I normally prefer to use a wooden ladle but sometimes it's just so clumsy in flipping. So, I decided to buy a thin flexible nylon ladle and try. Also, since flipping over is just a very fast action, don't need to worry about the heat melting the ladle which is my main concern about nylon or even silicone utensils. Do try it Ah Pa
